Everything was outstanding. Went early - 7:30 am after a typhoon passed, and it was not busy. No line and plenty of searing.
They have English menu - ask for it. The pork rice was great - little fattier and sweeter than those I had in Taipei (in a good way). The braised tofu was also good. Read moreTotally recommended! I really recommend the first item in their menu (綜合湯 - mix soup?). It has everything but in small amount: fish skin, fish dumpling, fishballl, shrimpball. The soup base has some taste, a plus compared with the other fish soup restaurants. Fish skin still has some fish oil from the stomach part. Some may like it, some may not. Still my favorite part of milkfish. Place seems to be remodeled recently since they cooperate (or join? not sure) with 周氏蝦捲 (Chou Shrimp Roll), it's very comfortable...

時隔三年多後再訪台南名店永記,其中一個心得是在討論一家店或考慮一家店是否值得推薦時,適度地再訪竟然成為一種相信是頗為少數的必要。2020年4月造訪時的永記當時已經是台南名店,人氣比現在還旺,一早六點多抵達還需要抽號碼牌,然後店內環境就是典型台南小吃店的比較陽春的環境,東西則是令人魂牽夢縈。沒想到三年多後再訪發現永記已經有了幾乎算是天翻地覆的變化。首先是相較以前周休二日現在是一周都有營業,而且全年似乎沒有什麼公休,這應該是2021年左右有聞永記將營運包給周氏所帶來的一個主要變化之一。另一個變化是店內環境大幅提升,雖然可能少了有些人心目中以前的傳統小吃的人情味或溫度,但是整體窗明几淨,帶點橘黃的燈光溫暖透亮,用餐起來更舒適是一大加分。
重點的餐點部份這次點了和三年前一樣的品項:一碗湯(綜合)和一碗飯(肉燥飯)。永記現在的肉燥飯賣相一樣極佳,唯不知是否走味或個人口味有變,這色澤偏深的肉燥飯感覺偏鹹,鹹遠大於甜,其中標配附上的招牌的醬瓜更是鹹到讓我無法完食,然後偏醬鹹就罷了,更糟的還缺乏香氣,感覺和以前印象中的鹹甜香的曾經是我心目中的台南最美味肉燥飯迥然不同!只能說現在的永記的肉燥飯已經不會是我心目中的台南首選。綜合湯倒是維持了印象中的水準,除了部份丸類似乎也偏鹹外整體依然澎湃且滋味口感俱佳,尤其是含料中的虱目魚肚塊完美呈現虱目魚鮮美的本味,似乎比印象中更好吃!然後這不含薑絲(以韭菜為主的)湯頭依然具有些許特殊的甜香,還是很不錯。
現在若有人問我台南最推薦的肉燥飯應該已經不含永記,不過湯品還是推薦,總體更新為四星。
有著深厚營業歷史淵源的永記是台南市在地最著名的虱目魚餐廳之一,而永記大概也是我目前看過做在地人生意最好的店,平常日一早六點半開門不到半小時內就已經坐到快要客滿,全都是在地客人,而且永記還是我看過台南小吃中唯一一家需要「抽號碼牌」的店。
看到它受到在地如此強烈支持,我也滿懷期待,而這次品嘗後只能說,的確名符其實。這次點了著名的肉燥飯和綜合湯,只有兩道,卻盡顯台南式澎湃美味的特色。就肉燥飯的部分,台南的肉燥飯有不少我認為都至少80-90分起跳,在這樣的環境,當你一口嚐到永記的肉燥飯,卻會發現: 這還是一碗有些不太一樣、也是好吃、但好吃層次還是有些不同的肉燥飯!...
