Remarkable cocktails, paired with delicious food, in a gloomy, chic atmosphere.
We started off with a pairing of Basque cheesecake to Espresso Martini & Smoky Chocolate. The drinks were extremely flavorful, and not to sweet, matching nicely with the buttery smoothness of the cake.
We followed up with the Mixed Sour and The Deck, which were doubtless the most unique drinks I've had the pleasure of trying in Taiwan. The sour had a strong woodiness and slight sweetness, with the aroma of fermented tea. Meanwhile, the Deck had an intense aftertaste of dryness that caught us by surprise, and without a hint of unnecessary sweetness that so many other bars rely on.
Well worth the cost, as this place truly sets a high standard for quality of drinks...

喝酒還可以跟你聊 MLB 的酒吧?
中山站或是條通區塊永遠不缺日式風格的酒吧,每個人一定找得到自己喜歡的那一間,但這家脫胎自澤山珈琲原班人馬經營的「Bar 澤山」,用對於細節與風味的精準度苛求,揉合了我最看重的幾個要素:環境氛圍、調酒平衡、餐食搭配,直接晉升我心中台北前五推薦酒吧。
至於非常健談好聊的主理人與 bartender, 無疑也是未來會想將這裡當作中山區喝酒首選的原因之一。
整間店的空間不大,深色沉穩的裝潢搭配著小聲播放的輕柔音樂,十分舒服有禪意;聚光燈打在低調的木紋吧台檯面上,將喧鬧隔絕在外,也讓人更能專注於眼前綻放的視覺刺激與風味層次。酒單設計是一道菜色配上三杯酒的 pairing 概念,小巧思是每道菜集結起來會形同一份完整套餐,更有定期變化的特殊菜色。
既然曾經是咖啡店, 而且店內唯一的無酒精飲料是咖啡,那沒道理不來杯 Espresso Martini 吧?
除了基本的 Vodka 外,另外加入了 Rum 與相對低的甜度,完全擊中我的喜好。尤其是尾段咖啡的柑橘調後味浮出來,完全能體會主理人 Hank 所說以咖啡來發展風味的一杯調酒,甚至可以基於不同風味的豆子發展出各種變體,下次一定要嚐嚐其他版本。
喜歡經典的也絕對不能錯過各種 classic twist, 甚至只是同基酒但不同產地或特殊風味的升級版也很有趣。
像是第一次喝到的 White Sidecar,跟 Negroni / White Negroni 概念截然不同,只是使用了脫色透明、有點接近 Pisco 的 Brandy,做出如其名淡色且相對清爽的酒體。另外最近好像很流行的現代經典 Mosquito,用到了帶有烏梅風味的 Mezcal,將煙燻感、Campari 的苦甜與木質調性完美地在粉紅色澤中層層堆疊出來。
Bar 澤山不單純是一間酒吧,更是將氛圍、餐點與細膩度完美平衡的餐酒館。 雖然當天吃過晚餐才來,但嘴饞點的半熟干貝塔塔與油封蟹肉天津飯都令我們感到驚艷,可以感覺出來老闆對於餐點的想法與堅持,也重新調整了我心中對於酒吧與餐酒館間這條模糊界線的定義。
非常期待二訪的時候能來一份炸雞唐揚、一碗拉麵,再配上一杯用 Whisky 及 Sake 做的 50/50...
