Small noodle joint, takes about 6 people. However, the taste is fantastic! Menu doesn't have English nor do chefs speak.

It offers only two kinds of noodle, soup or dry. The first one on top is soup kind $200; second from top is dry kind $150; Check boxes on the right, the one with "Q word" means noodle texture is softer, the one without Q word is harder texture, shows in the picture below.

Other lists on the menu are side dishes. They are not so important after all. Ramen noodles are key reasons why...

The flavor is simple: chicken Soup itself is quite umm... delightful Perhaps could add a little more salt...Personal experience. Because to me eating Ramen, it's all about the soup. It's where all the heart and ingredients goes into. After a min later, they'll serve some shrimp X.O and fry garlic. Add the X.O, it will complete the reason why you are here for. 台北拉麵市場又多了一間以「雞湯」做主打的拉麵店 小店位在廣州街上、靠近愛國西路 從捷運小南門站2號出口出來,步行約3分鐘可抵達 因小南門又稱「重熙門」之故,《重熙老麵》便以此命名;重熙,取其「盛世興隆,光輝普照」之意。 老宅門面有著深夜食堂般的低調 《重熙老麵》菜單如下,販售品項相當簡單 三款老麵、一款燉飯,還有幾樣副食與湯麵topping,售價以台北拉麵店來說並不算貴 特別的是「加麵不加價」,基本量為120g,加麵加半球升至180g,其實180g的量不會太多,建議大家還是加一下吃得比較飽(笑)

胡麻豆腐—60元 有別於一般的嫩豆腐,改用不一樣的板豆腐 帶點皺褶、帶有厚度,同樣環繞著「老」的概念,胡麻醬點綴了清新 雞濃白湯野菜燉飯—60元 名為「燉飯」,但其實不是我們所熟知的義式燉飯,反倒比較像是粥品的概念 使用台梗九號生米混雜糙米,和雞湯、香菇、玉米筍等時蔬直接炊煮,用生米直接滾更能讓味道深入其中;口口皆能感受到雞湯香氣重擊味蕾,米粒更是軟爛得恰到好處 上頭炙燒有那麼一點畫龍點睛的功效,香氣讓雞油更為奔放,完成度相當高的燉飯,非常好吃 鰒玉珧雞濃老麵—350元 這碗是深夜限定的隱藏版菜色,只在晚上8點後供應,每天限量20碗 除了基本款的雞湯拉麵配置外,還多了鮑魚、干貝,這樣的組合實在夠豪華,選用台灣東北角的活鮑魚、日本生食級干貝 新鮮度完全沒話說,搭配烹調至恰到好處的熟度,軟、嫩、彈三味一體,把場景拉回拉麵店更顯難能可貴 低溫烹調的叉燒為近年趨勢,雞胸肉嫩到極點,一次給四片也很有誠意 回到雞湯拉麵本身,湯底使用「白鹿花老母雞」,加上大量的雞腳、蔬菜熬煮 湯頭表面那層薄膜代表著長時間熬煮,入口後在雙唇上留下一抹膠原蛋白的黏,滋味討喜 雖然說一副日式拉麵的賣相,但我不會這樣定義它,反倒比較偏向中式料理雞湯的做法,鹹度上也走溫和路線

「鰒玉珧」的湯底裡頭,還額外加了蛤蜊清湯,W系湯頭海鮮味鮮明而搶眼,當下決定改天再來試試基本款雞湯~湯麵都會額外附上櫻花蝦油、蒜酥,店家建議吃到後半段時再加入變換味蕾、增添層次;因為「鰒玉珧」的湯頭本來就有海鮮系元素,在櫻花蝦油的加分之下,風味倒是挺有層次的 麵條部分應該是選用加水率中等的黃捲麵,帶有一絲鹼水味;適合一口麵、一口湯搭配著吃,整體來說還蠻優秀的

雞油拌老麵—150元 另一份主食選擇了乾拌麵,乾拌麵一直是我的心頭好,但台灣好吃的卻很少 麵條跟湯麵一樣是使用黃捲麵,但沒有泡在湯中,帶有硬度的麵心口感更為鮮明 菜單上寫著(微辣),是帶有一點辣度的 對於能吃小辣的我來說,屬於輕鬆寫意不構成負擔的辣度,或者該說,麻度高於辣度、香氣十足~低溫烹調的雞肉叉燒同樣優秀,拌上瘦肉末,雙肉雙享受,周花花個人很喜歡這碗乾拌麵,香辣開胃夏天來吃也很棒~夜晚時分,走一趟台北西區、品一碗南門老麵 相當有自家特色的雞湯拉麵。

Since I live just around the corner, I have always wanted to try their noodles. Today I was able to do just that, and I'm glad that I did. The broth of of the noodles was just perfect: not too salty, not too bland. And they have the best egg (糖心蛋) that I have ever tasted, and I have tried a lot. The price is also fairly priced given the quality of the noodles. I'm definitely going back.

Since I live just around the corner, I have always wanted to try their noodles. Today I was able to do just that, and I'm glad that I did.
