Gillardeau
Gillardeau oysters are cultivated for four years, following strict rules that have been passed down for four generations. Nine months after birth and a period in containers in oyster parks, they are placed in bags and submerged for more than three years in deep water, rich in phyto-plankton that forms the essential basis of their food intake. The substantial flesh of the Gillardeau makes an immediate impact. This voluptuous, firm, almost crunchy flesh invades the palate, creating an enchanting experience of taste, both mineral and vegetable and is extended by a crescendo of delicately sweet, subtle and refined flavors. Lingering on the palate, this meaty flesh with its aromatic finesse and enduring nutty flavor is the signature taste of the Gillardeau. It will also be a source of inspiration for many recipes.
Ostra Regal
Grown by La Famille Boutrais, of French oyster fame, this is the cadillac of the Boutrais oysters, but–c’est un scandale!–it’s actually an Irish oyster, confirming the worst-kept secret of French oysters: Ireland has the terroir superieure! (All Boutrais oysters are Irish, actually.) Seed is grown in Clew Bay, on the west coast of Ireland, for a year, until the oysters are about an inch and a half, and then the rock stars (less than 5% of the candidates) are transferred to Bannow Cove for two more years to complete their transformation into, well, rock stars. Only the heaviest, roundest, curviest oysters are used. They are given lots of space–just two oysters per square meter–so they can feast on the rich springs that feed the bay, which has a very narrow opening to the sea, allowing it to fucntion like a giant natural claire. By the time they come to market, they are four years old and filled with dense, sweet, mineral meats.
Fine De Claire Verte
Fine de Claire Verte, famous oyster from the largest oyster-producing region in the world. The oysters are finished in knee-deep claire (rectangular salt ponds) for a minimum of one month, during which they fatten and take on a sweeter, fruitier flavor from the water and phytoplankton in the ponds. Unlike regular Fines de Claire, the green ones are finished in ponds containing the Blue Navicula algae, which turns their gills jade and supposedly enriches their flavor. Agate Pass Pearl
The Agate Pass oyster is a tide tumbled oyster from Agate Passage in central Puget Sound, Washington. Agate Passage is a relatively protected body of water fed by swift currents from the main channel of Puget Sound. The proximity to the main channel creates an oyster that is higher in salinity than most of the oysters from nearby and further south. The tumbling process creates a deep cupped shell, with plump, full meats. The oysters tend to have a bright initial salt, that mellows slightly through the middle of the palette and finish with a hint of salted cucumber.

Great experience sampling freshly shucked oysters from various corners of the world. Came here with a group of friends and first experience was great looking at their extensive menu list and readily equipped iPad showing images of each and every single one of their dishes - very thoughtful and hospitable in the most modern sense.

Myself and companions opted for the oyster platter with two different varieties. There were six pax so we got to try 2 different types of oysters each- unfortunately cannot recall the regions from the first platter. Although, my personal drawback would be that I am not a keen oyster eater and frankly do not know much about them, but my friends all absolutely loved their bites and Chablis wine pairing that also comes with the set. Beyond the 12 oysters were the Hokkaido scallops: 6 in garlic butter sauce and the other 6 in ponzu sauce - all enjoyable, although the pieces I think were a little small compared to Hokkaido typical sizes. The Irish whelks was delicious and paired so nicely with the Thai seafood dip - my personal highlight. The prawn salad and the truffle ravioli were also some nice contrast to enjoy alongside the heavy briny flavours from the oysters. Of course with the wines, we later opted for riesling which was another enjoyable pairing aside from Chablis. There were many more extensive wine selections to enjoy.

It became clear only a few minutes that the first platter wasn't enough, so we opted for another selection the second round with 3 more oysters to sample for each person. The three different types of oysters were from Italy, France and the US. Each oyster tasted unique and different, which was a great experience.

Another quality absolutely worthy of mention is the interaction between the staff and the guests. It felt very top notch from the hospitality, attentiveness and their comprehensive explanations on each types of oysters. Absolutely many positive memories and warmth made alongside the enjoyable dinner.

I would recommend this place to anyone who is looking to enjoy oysters. I for one can confirm that they are freshly shucked - having also learnt that they are eaten alive to my dismay. I can't personally say that I like oysters, but drawing on all of my friend's reaction I really cannot see the fault in any ways. Although, one tricky aspect of this spot is its location in a rather small alley / soi, which when finding places to park your car can be a challenge. The pricing is also premium, and they serve the San Benedetto for still water I think - so this is something to expect when dining here. All in all, enjoyable food and...

The welcome was really fantastic as soon as we arrived, and we were seated very quickly and the staff was accommodating to our seating requests.

Started off with the shrimp entree which was fantastic and had a unique pairing sauce with it. The sauce was a little on the sweet side but there are plenty others that were available if that’s not your thing.

We came for the oysters and it was so incredibly delicious we needed up ordering a pair of every oyster available on the menu. Not only was the flavor fantastic, but the presentation was very well done. Furthermore, Babe, the staff member who we interacted with mostly throughout the visit, was incredibly thorough in offering topping recommendations for each individual oyster, and the order we should have them in.

I also had a Bloody Mary from the bar that was quite good.

We were treated to a cocktail on the house at the end of our meal and an extra treat for my partner after we shared it was her birthday (this was post-meal and drinks so the service wasn’t adjusted or improved because of us sharing).

Overall, the entire time was really great and I would definitely go back/recommend this place to anyone who enjoys oysters and a nice friendly...

Absolutely the best experience in Koh Samui. I was highly recommended by a friend, and as someone who loves oysters, I had to go try.

First of all, getting a reservation is highly recommended, and it was super fast and easy to do so.

When we first arrived and before ordering, we already got to experience the great service from the staff there. They clearly explained everything and also about the different oyster selections on hand.

We ordered almost every type of oyster, Irish welks, deep fried squid, mussels, and the surf clam. Everything was fresh and cooked to perfection.

The staff thoroughly explained to us which order to eat the oysters to get the best taste, and we learned so much. We also learned from them how to check if the oyster is fresh and still alive (and all the ones we got were!).

They have a good selection of wines and drinks, which are all reasonably priced as well. Overall I give this a perfect dining experience - great service, great food, price is reasonable given the quality of food you get. The service and food quality is better than I've experienced in some fine dining restaurants. Bravo...
