We were fortunate enough to have booked our meal during a collaboration between Taan and Potong. We were already excited to see what Taan had to offer being the only other fine dining experience we chose alongside SORN so to hear Potong Chef Pam would be working on the menu was even more exciting. My wife who takes each dish as they come was less enthused, until the first dish came out. Everything about this experience was perfection. The setting, atmosphere, service and tableware were all spot on. The sommelier assisted us with choosing a Thai white wine to completement this one off menu and it worked perfectly. Staff were attentive and swift without rushing. A perfect level of service. Our two standout dishes were the Chef Pam crab dish and Chef Thep pork tongue Satay. Both have earned themselves a very well earned top 5 worldwide dish list from my wife and I. Simply superb, based on these two dishes alone we will be praying these chefs open a restaurant in London in the future so we can regularly visit! It was great to have the chefs personally explain each dish and their inspiration behind them. A highpight for me was Chef Pam pointing out the window when explaining an inspirational soup from China town. Each of the 9 dishes really worked on my pallette. Either perfectly balanced and satisfying or challenging and enjoyable. Such a rarity in a tasting menu! My wife wasn't a huge fan of the beef sausage or durian-esque dessert but that's never a reason to complain. We were not sure what to expect in terms of the food as we were told it was an “out of the box” presentation of Thai cuisine and we were blown away by the experience. Located at the top of the Siam Design Hotel - the views of the Bangkok skyline are stunning. We were shown to a lounge area where we were introduced to the menu & had our welcome drinks. Once shown to our table, our culinary adventure started & it was course after course of exquisite Thai food that is very different from the norm. In total 9 courses for our degustation meal & portions were perfectly sized. The tastes and textures of what is quintessentially Thai was all there but presented in an unexpected way. All food was sourced locally & makes use of local farmers & spices. The chef really knows what he is doing & all dishes served were delicious. Service was excellent & each dish was well explained & the staff take great pride in their Thai heritage.
