The food's a big disappointment, and often arrives cold or overcooked - children's food is often sold out completely, making it a bad option for kids. Many adult options are also out most of the time. We've been a few times, and it is by far and away the worst Wetherspoons in the Lothians. Depending on who you encounter, the bar staff vary between friendly but overworked, and downright hostile.
Because it's a Spoons, there is little or no queuing system. When there is no one there, grumpy old men will jump in front of you and the staff will serve them first. When we sat on a high table near the bar, an old man with a tracheotomy who just went and sat at our table we were at right next to us and forced us to move because he said it was "his table" even though others were free.
The bouncers seem to have a 'tude. Last time we were there one of the bouncers kept prowling around the pub, shooting us filthy looks as we were having our meal and minding our own business. One of the women we were with complained later that he had looked at her like a "slab of meat" and found it very creepy. It totally kills the atmosphere you'd expect from a pub. There are cameras inside the gents toilets which face away from the urinals but still look onto mirrors which overlook them, so you can probably be filmed while taking a pee there. Lovely. Not.
On the plus side the bar seems to have long opening hours (although I've never been in early in the morning) which is possibly one reason it has organisational issues and food shortages. It also has wheelchair access to most of it, apart from a stepped area. WiFi rarely works properly, and it's necessary to order by the app, because there is no phone signal in most of the bar. (As said above - bar service is affected by queue jumpers and funny attitude of some of the staff.)
Wouldn't recommend it given the downsides you've mentioned. Might be worth checking out other spots in Edinburgh for a better pub experience. There are plenty of alternatives on George Street and...

The Alexander Graham Bell spoons. What a place! It was an exquisite experience for both my valentines date and I; from entrance till exit. First step into this warm wome like home for many, began with a pleasant welcoming hug to the eyes from the delicious taste of the interior design. This was followed closely by a boujee little corner table. Fish and chips is what I had and boy golly it tasted like it had been caught fresh this morning. The quorn nugget wrap is what my lady friend indulged in. Her words exactly "when I take a bight I feel like I'm lying on the sheets of a freshly made bed with the balcony doors open and a light breeze comes in to greet me while Ryan Gosling sensually kisses my flower".
Now let's take a gander at the service. One word is all I need !!SO FRICKING GOOD!! We were consistently served by a lovely man with a dapper style, who wore a zebra shirt and when complimented about it he told me where he got it from in such a friendly way. He also did have impeccable hair aswell. Genuinely really great service.
I truly only have one negative thing to say about my whole experience. The couple next to us kept crying and it put me off my cookiedough sandwich.

No biggy, we asked for help at the bar. Ordering was a little confusing but overall we liked using the app to order. We are foreigners so things get a little crossed in translation, we apparently were brought someone else's (what we thought) were fries. Since we had ordered two extra fries, we assumed they were ours. An hour into eating, a manager approached us visibly upset accusing us of taking food that wasn't ours. "you need to check the app when you get your food!" Our table was indicated on the app and a waitress brought us the food. The "fries" were given with our entrees. The manager's attitude and accusation was honestly so insulting and unnecessary. We all were very uncomfortable and left right after and will not be returning.
