I found my new favourite bar AND favourite drink, in the same night!

Project Halcyon ticked every box.

The temptation to share every detail is palpable. However, I have to let you experience it all for yourself!

The atmosphere is relaxed and has an easy-going, chilled-out vibe.

The service is exceptional, and the staff are personable and very attentive. You're looked after throughput, whether it be water and snacks, walking you through the menu and options, taking care of your drinks if you might like to smoke, or checking-in to ensure you've everything you need at JUST the right frequency.

The cocktail menu has been devised by the people who work there, with the creations being planned and executed to perfection - all on-site.

Personally, I chose to drink from the Old Fashioned trolley, which is a custom-made ...I'm going to stop and let you find out for yourself. Long story short, you choose your flavours (from whiskey - to - bitters), whether you want it smoked, then sit back and watch a remarkable drink be created in front of your very eyes.

Brilliant and baffling, if you can find it! And I won't spoil it! This place is for the Connoisseur! Went there with my wife on Saturday night just before the live Music started at 9pm, it wasn't busy, very welcoming indeed and asked us to take a seat at the Bar whilst they brought a table to the middle for us! I'm not sure why the wait ,as there was plenty of tables! Good live music trio. I ordered the Project Halcyon Gin Cocktail and it was so good I wanted another, my wife had a Mocktail and it was excellent aswell. I couldn't get another Drink of my first choice as they had run out! I chose another but they had run out of that aswell! In a Distillery, so we had a laugh about it with the Waiter, all good fun, we wanted some Peanut's but they had sold out of them also. A very unique place and experience, it's fantastic and I can't wait to go back but I don't know why or when! You just have to go! It gets 6 Stars out of 5. I’ve been here several times now and always had a pleasant experience. The venue style is Chesterfield furniture and American speak easy, the bar having lots of brass, large comfy seats and friendly staff serving a wide selection of beers, spirits and cocktails. Around the corner of the bar is a caged area of fine spirits and if you’re a lover of fine spirits and want to treat yourself then you’ll have as much fun in this area as I did. The whole venue also has different types of seating situated around the lot, which adds a nice dynamic to seating having a selection of seats from a Chaise Lounge to Chesterfield elbow-rest bar seats. The cocktail menu is nicely designed with painted illustrations, the selection of cocktails is good and not too overwhelming with the ingredients being both interesting and delicious. I especially enjoyed a Mastiha/Mastic cocktail as it’s not a common ingredient or well known outside of Greece. It was a nice surprise. Will go again and often suggest it to...
