We arrived for lunch service shortly after opening and were greeted by the chef & owner. During the cooking and our meal we conversed with the chef about the food, cooking process, and the traditions of this kind of restaurant.
All the food was beautifully cooked right before our eyes and served piping hot. You're meant to eat as the chef cooks for you, rather than waiting for a meal to be complete. This is a nice departure from traditional Western practice.
