I grew up with strong ties to coffee as I have family who have coffee plantations in Honduras . Fondest childhood memories are those with family harvesting coffee in early spring as it lightly rained and we laughed, told stories and imagined what would be. I had the privilege of intimately getting to know the hard work, the labor of love that goes into that beautiful cup of coffee. My cousin is carrying this wonderful coffee legacy with Brewed Monday Coffee.
Unbiasedly and unequivocally this coffee embodies all wonderful things one would want in coffee. I love all the three types of coffees ( the Honduras -Honey process, Honduras -Natural process and the Colombian -Natural process) and each one is unique and lovely!
The Honduras Honey process gives a lighter dessert vibe, the Colombian -Natural gives notes of vanilla and peach, while the Honduras Natural is full-bodied, strong and pleasant . It is tough to pick a favorite but if I must, I would say the Honduras-Natural is the one for me. I love the strength, the roundness and creaminess it emanates. It is delicious!

The co-owner, Nick, is incredibly passionate—not just about brewing great coffee, but about the entire process, from sourcing to serving. Their beans are directly sourced from farmers in South America, and one of their standout blends is a single-origin medium roast from Copán, Honduras. It comes from Finca El Ocotal at 1,328m elevation, using the Lempira varietal and washed process. The flavor profile—chocolate, brown sugar, and vanilla—is smooth and rich, and the blend is inspired by the nearby Mayan ruins, giving it both cultural depth and a unique story.
Nick took the time to walk me through several brewing methods and explain the origins of their coffee, and you can tell there’s real care in every cup. Read moreI'm not a coffee connoisseur by any means, but this has to be the best coffee I've ever had! I'm so used to drinking coffee with cream and sugar, so I tried out the Honduras Honey Process coffee in a latte. Even with the oat milk and sugar, I could tell that this coffee was way better than anything I've had before, and asked to try a small sample of it just black. I was waiting for a bitter aftertaste and the sensation of oncoming heartburn, but none of that happened! It was so smooth and flavorful that it didn't need to be sweetened, nor was it acidic like typical store bought coffee, so it didn't even need to be mixed with cream. I was blown away!
Justo explained the entire selection and roasting process. The quality and care that goes into making this coffee is so impressive! That and the support they give to small farms by working directly with them is all the more reason to at least try this coffee.
