When we stepped into Guajillo last night, we felt as though we'd returned to Mexico. We suffered through the uncomfortable seats and enjoyed the warm salsa and chips. The waiter was pleasant. We are not sure there are any Mexicans at the restaurant anymore.

We ordered the Enchiladas Poblano, and when we asked if the chicken enchiladas had cheese, we were told that we would be served a combination. When the enchiladas came, they were hidden by a mountain of lettuce--reminiscent of Chi-Chi's--and it was difficult to find the enchiladas. They had very little mole, which was entirely too sweet. There was no cheese at all. They were very dry, so I asked for some hot sauce to both moisten them and to make them less sweet. We forced them down.

We also ordered the Ensalada de Jo, primarily because I had been making salads with beets and I had run out of beets. "Mixed greens" was just a mountain of shredded lettuce and try as we might, we couldn't find the beets. We paid extra for the shrimp, and they were good, but we finally asked the waiter where the beets were, since we couldn't find them. He said they would give us flan on churros to make up for the beets. Hardly healthful.

I asked if the churros were served with chocolate, and was told that yes, they would be. They were very hard and there was some light brown sauce on them and some red sauce on the plate. I ate one and it wasn't very good. I asked the waiter about the chocolate and he said there wasn't any! Why did he say there was? I didn't eat any more: There were six small, hard churros with unidentifiable sauce. My husband forced down three and he couldn't sleep all night because of indigestion from the food.

Two stars are for the salsa, shrimp, and the pleasantness of the waiter, even though he was dishonest. Kind of a high rating. What a terrible waste of money and disappointment. We know Mexican food, and that is not what we...

But let's talk about the food - it's simply fantastic! Guajillo offers a wide variety of classic Mexican dishes, each bursting with bold and authentic flavors. But what really sets Guajillo apart is their margaritas - they are hands down the best in Arlington, period. The perfect balance of sweet and sour, and with just the right amount of tequila, they're a must-try for anyone who loves a good margarita.

Despite the entitled clientele that can be found around the area, the service at Guajillo is exceptional. The staff is always attentive and friendly, and Rolo, the owner, goes above and beyond to make sure that every guest is satisfied with their experience.

Of course, no review of Guajillo would be complete without mentioning the parking situation. Yes, it's tight, but that's just par for the course in Arlington. The food and drinks at Guajillo are more than worth the effort it takes to find a parking spot.

The staff were very accommodating and friendly during lunch service. My date and I felt a good customer service experience. Vibe - I’m going to call it rustic artistic! Their are colorful paintings inside the restaurant and lived-in seating. It’s a chill vibe. Lighting could be a bit more even spread out, but it’s not like you can not see inside. Bathroom- it was clean, but yeah broken sink. You can still wash your hands, but it limits the experience not having hot water. Food - we order tacos. They were decent overall. I did like how you can mix up your three selections and tasty sides - rice and beans. Not the best tacos I’ve ever had, but yeah a bit simple in favor profile (taste, texture and garnish). This is your average run-of-the-mill Mexican restaurants. We came here for National Margarita Day. Drinks are pretty good, the house margarita was good. The agave Rita was my personal favorite, on the sweeter side but the orange liquor gives a little more depth of flavor. The cheese dip has an odd taste to it, wouldn’t order again. My friend ordered a burrito which is her go-to and said it is delicious. I got a steak quesadilla which was good, nothing special. The employees are super nice and attentive. The restaurant is slightly small, with about 10-15 tables and a bar. Overall, the drinks were good but I’m not strongly urged to return.

If I moved from the DC area, Guajillo is one of the restaurants I'd miss the most. Every menu item is excellent, but there is definitely a standout among them: the mole poblano. It is made from scratch (like everything else), simmering for hours and hours and made from too many ingredients to count. Each one blends together to make the perfect sauce accompaniment to the chicken breast or enchiladas. Get an extra dish of the mole poblano; I have eaten it straight out of the bowl with tortillas! Everything else is delicious as well, from appetizers (ceviche!) to all of the main courses. But have the mole...you will be happy you did!

If I moved from the DC area, Guajillo is one of the restaurants I'd miss the most. Every menu item is excellent, but there is definitely a standout among them: the mole poblano. It is made from scratch (like everything else), simmering for hours and hours and made from too many ingredients to count. Each one blends together to make the perfect sauce accompaniment to the chicken breast or enchiladas. Get an extra dish of the mole poblano; I have eaten it straight out of the bowl with tortillas! Everything else is delicious as well, from appetizers (ceviche!) to all of the main courses. But have the mole...you will be happy you did!
