This recipe needs half kg chicken (1.1 lbs.). Make few slits on all the chicken pieces and add to a large bowl. Then add • 3 tablespoons plain yogurt (Indian curd) • 1¼ tablespoons ginger garlic paste • ½ to 1 tablespoon garam masala (or biriyani masala) • ½ teaspoon salt • ¼ teaspoon ground turmeric • ½ to 1 teaspoon red chili powder (reduce for kids) • 1 tablespoon lemon juice (optional)
Mix everything well and marinate the chicken. Cover and set this aside for 1 hour. You can also rest it overnight in the fridge.
Meanwhile add 2 cups basmati rice to a large pot and rinse it at least thrice. Drain and soak in fresh water for 30 mins. Drain to a colander after 30 mins. Optional – Soak a pinch of saffron strands in 2 tablespoons hot milk.
Cooking chicken Heat ghee or oil in a heavy bottom pot or pressure cooker. Make sure you use a large one for this. Using whole spices is optional but recommended. Use whatever you have. I use • 1 bay leaf • 4 green cardamoms • 6 cloves • 1 inch cinnamon piece • 1 star anise • ¾ teaspoon shahi jeera (caraway seeds) • 1 strand mace
Add thinly sliced onions. On a medium heat, fry them stirring often until uniformly light brown.
This is the correct color of the onions. Do not burn them as they leave a bitter taste. (check video)
Add marinated chicken & saute until it becomes pale for 5 minutes.
Lower the flame completely. Cover and cook until the chicken is soft, tender and completely cooked.
Check if the chicken is cooked by pricking with a fork or knife. It has to be just cooked and not overdone. Evaporate any excess moisture left in the pot by cooking further without the lid.
Taste test and add more salt if needed. I added ¼ more salt here. Add • ¼ cup plain yogurt (Indian curd) • 1 teaspoon garam masala (or biryani masala) • ¼ to ½ teaspoon red chili powder (optional) • 1 slit green chili pepper (optional) • 2 tablespoons chopped mint leaves (pudina)
Make chicken biryani Mix everything well. Spread it evenly in a single layer.
Layer drained rice all over the chicken. To a separate pot, pour 3 cups water and add ¼ to ½ teaspoon salt. If cooking in a pot (not cooker), start with 3 cups water at this stage. Makes you feel kind of like you're lying or your thief in an area that you should have no reason to complain about missing items because we just have the money right?! So you want to give me free sandwiches but don't want to give me the milkshake that you did fail to give me and the waffle fried, and make me feel like I'm a liar or trying to screw Chick-fil-A over. So customer service not their strong suit, and according to them it is their policy that if you're missing items you have to call that same day but nowhere is it notated that if Chick-fil-A screws up and you leave the drive-thru without double-checking that they've given you your entire order it is totally on you to call. It doesn't matter if you have a thousand things going on and you're missing food and somebody's going to go without a meal or you have to find a substitute; none of that matters. So if you didn't know, now you know, at this location which seems to happen frequently and I just let it go and let it go; don't do that, if you're missing something, call! They'll never refund anyting and if you don't go right then and there to fix it, good luck because you'll be made to feel like you're a liar or somebody who's just trying to cheat them out of a chicken sandwich! On another note if you're in a hurry and don't care about the quality of food or your burnt fries or a cold chicken sandwich you go through window number 2 in the Drive-Thru if you got time you go inside. Read moreI absolutely hate coming to this location for breakfast, I always have issues, the lady who was at the window (Hispanic/ had on a non red shirt) I’m assuming she may be a manager for mornings she is always at the window when I come. Each and every time I come to this location the biscuits are thrown together, I get the same chicken biscuit and each and EVERY time the biscuits are thrown in the wrapping and crumbling as soon as you try to lift it. I have never had this happen at any other location throughout Georgia that I have been to. When I took my biscuit back today after being fed up with just accepting whatever they give me, the lady at the window had a huge frown on her face ,and so did the other girl standing behind her as if I inconvenienced them (there was no one in line btw) and said “it was free” when I told her I wanted a new biscuit..(I’m assuming she said this because I got a free reward for the biscuit I ordered and didn’t have to pay for it ) and it threw me for a loop because that’s basically like saying “oh you got it for free so just take what you got and be happy” I spend a lot of money at Chick-fil-A and I highly doubt the store owner would be happy about this type of service.. i don’t know what’s up with the breakfast crew at this location but their attitudes are TERRIBLE.. not the best representation of Chick-fil-A service at all.. I never have any issues when the lunch crew comes in ( THEY ARE AMAZING , delivery and all! ) which by the way are completely different individuals from breakfast.
