Selfishly, I don’t want to do this. I love this taco hut so much that I don’t want it to become a line-ridden circus... but it deserves to be, so here I am.
For a long time, I’ve looked for a close match to my favorite tacos of all time, Houston’s Tacos Tierra Caliente - this might be Austin’s match.
I tend to judge a taco shop based on three tacos: Migas, Al Pastor, and Barbacoa. Tacos Laguna nails all three in distinct ways. My favorite might be their barbacoa that offers that fatty, tongue coating flavor that real barbacoa should have; but what’s really unique about it is they’ve refined the final product to exclude some of the “gristley” extras that’s tend to accompany barbacoa.
The tortillas play perfectly with all of their tacos - I just love this place. Trust me on this one - it gets my stamp.
