Read moreI'm usually skeptical about new Indian restaurants entering the market, as they often face issues that need addressing. A standard operating procedure (SOP) is essential for maintaining consistency across all business aspects, especially food preparation.
During a late-night craving visit at 11 p.m., we noticed that their takeaway packaging requires significant improvement. A successful food business understands its product journey from end to end.
Regarding the food, we experienced inconsistency in taste. Our order included three Pav Bhajis, two Vada Pavs, a Masala Pav, and Dabeli.
Masala Pav (1/5): The Masala Pav was disappointing. Unlike Dabeli, where bhaji is sandwiched between the bread, Masala Pav should have pieces of bread smothered in bhaji, as though dipped in it. Pav Bhaji Express misunderstood this concept.
Pav Bhaji (3/5): The dish was overly watery and lacked the expected sloppy consistency. It was spicy but not in the flavorful way one anticipates with Pav Bhaji.
Vada Pav (4/5): Although good, the dry red chutney added little value, missing the expected garlic kick found in a quality sukha chutney.
Dabeli (4/5): Tasty, but the addition of pomegranate seeds as garnish could elevate it further.
Mango Lassi (5/5): This was the best I've had in Texas, truly exceptional.
The use of plastic containers for packaging, except for bhaji, was frustrating. Paper boxes, which offer better ventilation and are less likely to cause sogginess, would be a preferable alternative.
I would also be willing to pay extra for homemade bread for the Vada Pav. The current bread is too thick; baking a suitable Pav should not be challenging.
Overall, the restaurant is average and somewhat disappointing. It seems its popularity may have been boosted by a YouTube video.

--Dishes-- --Vada Pau- Okay (Can be ordered)
--Pau bhaji- This was disappointing. It felt quite strong (concentrated) and had a lot of redchilli powder to make it spicy. It should be made spicer without making it feel like the taste of only red chillis. The cheese was just grated/shredded on top. I would not order this again.
--Dabeli was not worth ordering. I feel it could have been better as the filling was not generous, sweeter than expected and less flavourful and less peanuts.
--Mango Lassi's- Did not have much of mango flavour.
--Sev Papdi Chaat was okay. The crispy papdi had some yogurt based topping with a dash of chutney and sev. If you like more of the filling with a light base, I think Dahi puri would be a better choice. The papdi is only for the ones who like more of the crunchy base dominating the flavour rather than the fillings/topping.
