Came in on Sunday for a to-go order and was immediately underwhelmed. With only two other tables occupied, it felt surprisingly empty. The biggest red flag right off the bat was the complete lack of that smoky aroma you'd expect from a place serving smoked meats – it simply didn't smell like they were smoking anything on-site, which is definitely not what's advertised. I ordered two of the 5-meat plates. The chicken was a major disappointment; for some reason, it was pulled off the bone and chopped into tiny pieces, resulting in it being incredibly dry. To make matters worse, they seemed to fold and shove the rubbery skin and cartilage back into the meat, which was just bizarre. The sliced brisket was cold, and the chopped brisket was also dry. The sides weren't much better. The beans were dry and clumped together, and the greens were truly an assault on my taste buds – absolutely no flavor, and even adding salt couldn't save them. When I placed my order online, I left a significant tip, even though I was picking it up myself. So, when I went in and asked for some sauce to go with my order, I was honestly shocked to be directed to a counter full of sauces with crusted-on tops and told to serve myself. This is just crazy for a to-go order, especially for someone who tipped so heavily. You'd think they'd send me on my way with everything needed to enjoy the meal without me having to do the work. But honestly, even if they had included the sauce, it wouldn't have been enough to redeem the poor quality of the meats being served. The atmosphere was very welcoming. The service and staff were all kind and professional.
3 Star - Spare ribs were a little overdone and parts were difficult to chew. I did enjoy the flavor of bark on the ribs though.
3 Star - The brisket I am struggling with. The sauce on the brisket was sweet and with the burnt ends, just is sweet, followed by more sweet. There wasn’t much of a smoke ring. The bark was almost non-existent, looking and eating more like skin than a bark. The meat almost looked boiled. But it wasn’t dry really and wasn’t chewy either. It had a pretty decent flavor despite these things but nothing to make sure I come back for.
3 Star - the burnt ends, texture wise, were okay, but I don’t know if I’d categorize them as burnt ends. For my liking, the sauce on the burnt ends was way too sweet. I attempted adding other sauces to break through but it didn’t help.
4 Star- the Mac and cheese was really wonderful. Nice amount of pepper. It wasn’t too goopy but was just goopy enough. I really enjoyed the Mac.
I tried each of their sauces, and I really wasn’t a huge fan of any of them.
A little disappointing that the plates don’t come with drinks. I do have to say the amount of food I got for the price was pretty good.
3* = Good but no separation from similar restaurants 4** = Set themselves a part with unique food and I want to go back. 5*= You have to go out of your way and make a special trip to try the deliciousness...

This was by far my best experience with BBQ in this side of Phoenix. Been in the area for 2.5 years and I'm a big fan of BBQ. I've tried several locations and this is the best bang for my buck.
I had been craving BBQ Ribs for the past couple weeks now and was getting ready to visit my go-to spot, but chose to look for an alternative. I really wanted to find a place with decent size ribs. Just my luck, I stumbled upon Rollin Smoke Ribs.
I hardly ever base my choice of new restaurant on the $$ amount, but on the photos that customers post. This place did not disappoint. We came with hungry eyes and wanted to try as much as we could in one sitting. We had one Beef Rib (it was as big as my 1 year old's face 😮), Trio Platter with Sliced Brisket, Pulled Pork, Hot Link, a side of Mac n Cheese and Loaded Mash. My goodness, every bite just kept getting better and better. The Rib (which is what I came for), damn near melted in my mouth. OH! They also have Kool-Aid 🤯
Needless to say, THIS will now be my Go-To. Thank you Rollin Smoke for the experience. Your staff looked/seemed genuine and made great recommendations. We'll be back to try more of your...
