Been eating here for years. When you sit down they make salsa for you table-side every time and give you chips that are red yellow and blue(mostly yellow, they all taste the same but the color makes them look a step above). They bring a bowl of puréed tomatoes, add seasoning and chilies to your liking and also give you seasoned refried beans(not mixed in). Personally I prefer the beans(not the same as the ones you get as a side with your rice), but the salsa is delicious every time as well. I’ve tried most things on the menu over about 5 years I’ve been going there with my family, nothing has left me thinking “I should’ve gotten something else”. Probably the only thing I don’t like there is the white rice and black beans that comes with their vegetarian or low calorie options. I just prefer the yellow rice and charro beans. Honestly one of my favorite items is the mushroom tacos. I became vegetarian for a year, and they were one of my 2 go to’s and even now that I still eat meat again, I still order them from time to time. Their vegetable enchiladas are also very good. If you like vegetarian or like to do meatless days, I highly recommend you give them a try. If you like queso dip for appetizer definitely recommend the queso flameado, cheese chorizo and some grilled vegetables. Then they add some kind of liquor and light it on fire and mix it up(mostly for show but also adds a bit of liquid) and it’s served on an EXTREMELY HOT molcajete and it helps melt the cheese and mix all the flavors as well as keep it hot for a long time. Only thing I’d like is if they add some kind of cornstarch or something to help keep it together, the cheese kinda likes to separate and sometimes it can look a bit unappetizing - but trust me, it still tastes amazing. They have their combination dinners as well where you can pick 2 items (tacos, enchiladas, chile rellenos etc) and it comes with rice and beans. If you’re trying to stay low budget, but they always deliver on flavor, you’re not missing out on anything. Also recommend if you’ve never had them, order their charro beans instead of the refried beans. They are amazing, stewed beans cooked with onions, peppers, jalapeño s, bacon etc. During the day they have a lunch buffet, so you can eat whatever you want and however much you want. Also on Sundays they offer a brunch with has the most items on the menu and better items than their regular lunch buffet. The only thing I think is a bit pricy, but for what you can get I think the price is really not too bad. It also includes certain desserts, like tortilla chips with honey and cinnamon sugar(sopapillas?) various types of cookies and a chocolate fountain with strawberries and marshmallows(at least when I’ve been there). They have their main restaurant downstairs and upstairs is more of a bar/party room area where they also offer balcony seating - I’ve never eaten upstairs so I don’t know if the experience is the same. If you choose to go upstairs they have a staircase and they also have an elevator - mostly for employees with food trays but those with mobility needs(wheelchairs/walkers) are also allowed to use it from what I’ve seen. All the staff is very nice, friendly and helpful. I’ve never had a bad experience e there and always recommend it to friends or anybody asking about Mexican in the area. Also it’s next door to Buc-ee’s, so when you’re done eating you can go get gas or jerky or bbq or whatever. Also there is a Mexican market in the same parking lot so you can go get some groceries after and try and recreate what you ate at home(I’ve done it several times, nowhere near as good as the restaurant, but good...

Then this week I called in an order (same order as the previous 2 weeks and same order when dining in). I was told it would be $2 extra for a tiny 2 ounce container of Chipotle Sauce. I told them I'd never been charged before. They told me I should have been charged everytime. I told them I wasn't asking for extra sauce and instead of bringing me a container they could just squirt some on the taco. Nope, still wanted to charge me. I canceled my order and went to the restaurant to place the order, thinking the person I was talking to was mistaken. I was wondering why they would serve a dry taco ... without a sauce? When I got to Chapalas the hostess was the same person I'd ordered from on the phone. Now they wanted to charge me $4 for a 4 ounce container of Chipotle Sauce, again saying I should have been charged all along. Canceled my To Go order again. Receptionist left and went to the kitchen (and never came back while I was there) but as I was leaving, one of our usual waitresses came by so I talked to her. She left and went to the kitchen. When she came back she told me I could order the shrimp taco that came with the Chipotle Sauce already on it for $14.99, I think was the price I was quoted (and it came with rice and beans... which I didn't want.) I told them I wouldn't pay for a dry taco or for the Chipotle Sauce when other sauces are free and I'd been getting this CS free two times a week for months. I told them I wouldn't be back. Customer Service doesn't exist anymore. They would rather lose a minimum of $100 - $200 a month from a loyal customer than give up a squirt of Chipotle Sauce! Went down the street to the next Mexican restaurant and ask if they could make the taco I liked with the Chipotle Sauce. It wasn't on the menu but they told me I could substitute the slaw for peppers, bacon and onions and if there wasn't enough bacon on it, they'd bring me more! Read moreWe live in Waco, our family lives in Austin area. We decided to meet here for lunch on Mother's Day. It was very busy. We were seated upstairs which was less crowded and more pleasant. There was a buffet downstairs and it was a little chaotic. Our waitress was nice, took a picture for us. Took our drink and food orders. Food took a long while to come out. My dad ordered appetizers that were served with our meal. My oldest daughter and son both ordered burgers, plain. One came out plain and the other wasn't. My daughter informed the waitress and she took her plate. Instead of making a new burger, the waitress scrapped everything off of it, in our view, then brought the plate back. My daughter even thanked her but did not eat it for obvious reasons. My other daughter ordered plain tacos, they came out with peppers and onions. My daughter picked through it and ate 2 of the 3 tacos. My husband asked for sour cream, tortillas and lime, the waitress never brought it but we were charged for it. After bringing out all of our orders, a few of us asked for refills. After this or even before, she never came back checking on refills. She passed our table several times, serving other tables. She never stopped asking if everything was ok. We finally got her attention for our checks but she never came back to take payment. We finally had to go up to her to talk about our bill and pay. We asked if the burger could be taken off since it was wrong and my daughter didn't eat it. She went to get her manager, who argued with my husband about the burger being plain. He finally made the changes but would not allow us to decide our tip amount. Instead it was policy that we had to pay the 20%. Of course we paid and never have a problem paying tip anywhere else. In this case, our waitress was not attentive, avoided our table, never checked for refills, brought back a burger that she touched and tried to scrape everything off of, did not come back to take our payment.
