My wife and I recently celebrated our anniversary at Cascadia pizza in Bellevue. Everything about our dining experience was exceptional.
The pizza is flat-out great--all-world! My wife ordered the Wenatchee and I had the Butcher. Both were terrific with great toppings, tasty sauce, ample cheese and the best pizza crust I've ever tasted. I'm not a crust guy normally--I typically focus on the toppings. But this was different--just the right balance of crispy and moist chewiness, and a wonderfully light, delicious flavor that perfectly complemented the toppings. I often leave a scrap or two of crust behind, but this was just too good to waste! My wife's pizza was equally delicious--a creative blend of garlic sauce, bacon, apple slices and gorgonzola with balsamic drizzle. She RAVED about how good it was.
And don't miss the appetizers and salads! The bacon jalapeno poppers were absolutely to die for--best I've ever had--and we split a Caesar salad that was simple, fresh, and a perfect lead-in to our meal.
The service was as good as it gets--outstanding. Our server (Shane) was genuinely friendly, knowledgeable and helpful in answering our questions (it was our first time there) and on-the-spot attentive without hovering. Owner Christian Buck (he goes by Buck) made the time to swing by our table and chat, very friendly and clearly interested in how our experience was going. It's obvious that he's created an enthusiastic team that knows their pizza, understands what great customer service is all about, and is proud to be a part of such a dynamic, cool company culture. And the beer is fantastic. Cascadia has partnered with Bellevue Brewery and the selection was varied and balanced. The two kinds of lager I tried--a Mexican and a "hoppy" logger--were both excellent.

Read moreFirst off, we had no idea this place existed until we searched for a pizza place nearby. When you arrive, it is a itte difficult to see but thankfully there was a sign pointing us in the right direction. The building is not a traditional restaurant looking building but more of a business park.
Once inside, we were surprised by how big the place was. There is a massive bar with tons of seating. There is also a second bar around the pizza prep and cooking area. There were another 30+ tables. Super cool vibe and atmosphere. Definitely the opposite of a hole in the wall place.
We sat at a high top table in the bar area. We were immediately grated by a very friendly server showing us a beer list. There were a couple that sounded good so he offered to bring us samples of each (normally we have to ask places for samples). He brought back 3 good sized samples. Once we ordered, he brought them to us quickly.
We ordered a couple of pizzas and a side Ceasar salad. The salad came out quickly and was much larger than expected for a side salad. It was quite good. Right as we were finishing the salad, the pizza arrived. Both of the pizzas were also really tasty. Only minor complaint is there were a little under cooked for our taste but they use wood fire ovens so it is tricky to cook a little more without burning. Next time we will ask for them to cook a tiny bit longer.

Read moreOh baby! I wish I still lived in Bellevue now that the amazing Cascadia Pizza has opened up their latest franchise there. We visited around 6pm on a Sunday, and ordered 4 pizzas. They are still building out the interior, so no full sized pizzas yet, and no pesto sauce available just yet- but when they open fully in a few weeks they said they will have it all.
Smaller pizzas means I got to try a new one, the sicario, which was super delicious! Chicken, bread crumps, fresh basil post-bake. A really unique pizza.
We also tried the butcher (my all time fave), the Wenatchee, and the Cascadia margherita (our other three favorites, along with, oh, the whole menu) and everything matched the quality I’m used to from the maple valley location (Mecca).
Can’t wait to go back and try the brisket pizza (Wolverine), and the fresh pretzel!
They serve exclusively Bellevue brewing beer, since this spot used to be the Bellevue brewery. I guess it still is, they just joined forces? Either way, this was a weird interim area before, but will become hugely populated in years to come as the light rail is finished and the Amazon headquarters opens up.
