Overall rating is due to prices changing. Food - The birria tacos were delicious and the consume was outstanding. We also ordered the pupusa’s and even though they were in the menu selection they didn’t have them so we cannot rate those. The chips were stale though but since they were complimentary I’m not critiquing them. Service - Two issues. The sign outside said buy one get one drinks, we tried to apply that to sodas, but were told it was only good for margaritas. We were given the bar menu and were pleased to see that house margaritas were only five dollars so we decided to go with that. But when we got our bill the price changed to $10 per margarita. We showed him the menu he gave us and he argued with us about the price and how the price shown was after the BOGO which still makes no sense because who would pay $25-$27 for non-house margaritas. In the end we paid the bill and left (still reasonable for a margarita, but I don’t care for the bait and switch tactics) Atmosphere - we went on a Sunday afternoon during the broncos game and we were the only ones in the restaurant. All workers were mostly on break (good to see them eating their own food sitting at the bar) but we were mostly ignored. Run, don’t walk to Shreddy’s Tacos!!! We finally made it out for our first visit and it did not disappoint!!! Super stoked to have this Winter Park gem, right in our backyard, here in Boulder!

The homemade chips were crunchy and salted perfectly. The house made guacamole was a great balance of flavor.

The elote was perfect for this rainy day. Proportionate balance of corn, mayo, and cotija, resulted in a creamy delight!

The birria tacos are insanely good!!! The consommé was absolutely delicious and compliments the cilantro and onions!

The Full Send Papa Fritas was EXCEPTIONAL!!! This is a versatile dish with chunks of asada, house cut papas, and generous amounts of delicious queso! Absolutely FIRE 🔥🔥!

Great experience from start to finish - friendly and fast service. Staff took the time to explain the menu and made fantastic suggestions for our next visit! Portion sizes were deserving of the price.
