Must Read! I am very easily discouraged and 1887 DID NOT disappoint! I was told it was pricey. It is no McDonalds. This is a very special place! And well worth every penny! 3 of us dined in when our friend invited my husband and I. To try it all we split 3 appetizers, BLT Deviled Eggs (Absolutely AMAZING!), Frito Misto (Fried Calmari, with some whole squid pieces and Fried Zuccini with sauce. SO GOOD!), and Firecracker Shrimp (let me tell you heat and pineapple what an awesome mix!), Then we had low and slow chicken (2 big legs with potatoes good), my husband 12 Oz Ribeye (cooked perfect), Yukon Mash (so good), Caesar Brussel Sprouts (amazing). Now let's talk about mine. I ordered the Lobster Mac and Cheese. Another review gave them a bad review over this, let me tell you it is not dry and crusty from sitting. Macaroni cooked properly should be firm not mush, it was, Macaroni is not a soup so yes it should be cheesy (they called it dry) and the lobster mixed in is an acquired taste. I love Lobster and I love Macaroni and cheese, however I do not like fishy taste. So with my taste buds I couldn't distinguish if it was the butter of the Lobster or on the strong fish side, so I brought the rest home to try it separately. The Macaroni is absolutely AMAZING and if you are like my husband and dont have an issue with different fish taste then you will devour this. I just chose to separate mine. I am by no means knocking it. I hope they eventually offer the Mac and cheese as a solo dish as I would order it like that ad a side. Next time I am going after the shrimp and grits. I had this one time a few months ago on the east coast and loved it and just told them they needed a restaurant in Canon City! Hopefully I found it! If you are strapped on cash this may not be the place for you but when you are able to splurge thus is the place. And if you can not afford to tip your waitress 20% for top service at least then don't go. We did overspend only because it was our 1st visit and we tried EVERYTHING! And Lord have Mercy the cheesecake with Carmel drizzle was Absolutely the Bomb! We will be trying breakfast out as well! For our regular meals with sides for just my husband and I leaving out dessert and appetizers would of ran us around 100 + tip, with waters. Also it is not formal dress which is a plus to us. We wore jeans with nice shirts. The manager checked on us and Valerie F was an Awesome waitress. When asked how our cheesecake was, I told her horrible, I though we needed a free piece and we all got a chuckle. I 💯 recommend you go see it. We will be back! Congratulations on your opening and bringing good food to Canon City! Only 1 suggestion, we are in late 40's and eyes are starting to have problems maybe a little candlelight to help with reading the menu. It was comfortable on temperature and a great atmosphere with very comfortable seating. I was so impressed with everything I forgot take take pictures of main entrees. Update: Went next day wand took Brother in law from out of state for Breakfast! Again, exceptional service. GREAT PRICES FOR BREAKFAST! Love that they use "local" Greener Pastures Meat. Biscuits and gravy and omelettes were spot on! Wouldn't let me leave a 2nd review or again a 5+ star 2 days in a row, 2 different servers. And they were nice enough to open up the war room to let my brother see before he had to fly out of state. Thank you so much for making our day!

My husband and I are SO glad we stumbled upon your restaurant! We've been living in Cañon for 10 months, and as total foodies, we can’t believe we missed you guys until now. Seriously, you need to be the busiest spot in town—your name should be everywhere! We didn’t know it was a soft launch for the new menu, but we had such a great time tonight! I just want to share some feedback from a place of love (and a bit of foodie passion) because 1887 is perfect for this town and I want to see you guys kill it! The food was mostly amazing! The salmon and bison ribeye were absolute winners. But we did notice our sides were a tad undercooked, and the calamari in the frito misto could’ve used a little more love—it was rubbery. I wanted to fall in love with it! My drink was great! Our server was super sweet, but she didn’t know the new menu very well and it would’ve been awesome if she had shared more about the unique things around us, like the War Room! It’s such a cool spot, and a little encouragement to check out the interesting space and more info about the menu upfront would have added so much to our experience. It felt very transactional. With such a beautiful space and a premium menu, we just expected a bit more engagement and 5 star service! The interior design and atmosphere are seriously beautifully done and the live violinist in the lobby was a great touch for our date night! Also, as a marketer, I appreciate all of the fine details like the branded plates, knives and glasses. Cañon City really needs a place like 1887, and I can’t wait to come back and support you all as you grow! Keep it up—you’ve got this! 🌟

I have now dined at this amazing establishment 4 times, and plan to go back. Everything has always exceeded my expectations. Food, service, and atmosphere. I had already written 1887 a five star review from my first visit, but decided to delete my original review and address the two most recent one star reviews that Wendy and Darrel left.

I had the "pleasure" of sitting at the table across from them when they were dining last Thursday evening. These folks were nasty from the moment they sat down. They started their evening out by complaining about dishes not being "available". By available, they were complaining because they did not exist. They rudely made suggestions about what 1887 should offer on their menu. The poor little girl waiting on them did very well with handling their horrible demeanor and took their drink orders. Drinks came out immediately and she asked them if they were ready to order. They were not, so she came back again, and they still were not ready to order. It was about 5 minutes before she tried a third time and Darrel was already mad because he was not able to order the appetizer he had finally decided on. When she came back, they placed their order. It couldn't have been longer than 30 minutes and they had their food. They weren't happy with it and were very loud expressing their feelings about it. The manager came over and was trying to accommodate them, but there was nothing she could do to make them happy. She told them that she'd offer them some free cheesecake, and they accepted. Wendy was still eating, so I'm assuming the manager was waiting on her to finish her meal before bringing out the cheesecake. She finished up, and it couldn't of been just a couple minutes and the manager stopped by the table and politely asked "Are y'all ready for your cheesecake?" Darrel went off on her. "WE'VE BEEN WAITING ON OUR CHEESECAKE FOR OVER 15 MINUTES. WE JUST WANT TO LEAVE" Darrel and Wendy made a big scene all the way out the door. They were there for a TOTAL of an hour. Maybe a little longer. I was there for an hour and a half (I'm a slow eater and I love the atmosphere so why be in a hurry) and I was there when they sat down up until they left.

I write this review because I hope that you see it and give this restaurant a chance. They really have elevated Canon City's dining experience and I'd hate for someone to miss out because of a bad review with so many inaccuracies such as the one's left by...
