We have been to Rolling Smoke previously, and it was delicious. I am not sure what has happened since our last visit. (We are smokers. We smoke our own meats and side dishes. We make our own bbq sauces. But sometimes, we want bbq and don't want to have to make it ourselves, so we go out. ) I ordered burnt ends this visit. The only thing that maybe made these burnt ends was the fact that they were brisket and maybe cut from the point. They were not sauced, and I doubt they were double smoked. In fact, these seemed like they were just large chunks of brisket with nothing extra special done to them, which is opposite of what you'd expect for modern burnt ends. When the manager (maybe owner) walked by and asked how our meal was, I politely asked "Are these burnt ends or just brisket chunks?" The reply was "Those are burnt ends. Nobody I know sauces their burnt ends. When we had the food truck we served them with sauce, but I don't know anybody who sauces burnt ends. " While 'technically true for some rustic/old school burnt ends this is a lie that "nobody" sauces their burnt ends. Uhm, what? I sat there in disbelief that 1 - The manager/owner just gaslit me when I had a concern and 2 - that someone in the bbq world "doesn't know anyone who sauces their burnt ends". Every place I've been that serves burnt ends serves them in bite size chunks, and sauces them. And I sauce and double smoke my own brisket. And I am fine with people doing burnt ends "old school style" (naked) but don't tell me nobody sauces their burnt ends. If the manager/owner had at least just owned it and said, "this is how we do our burnt ends" rather than try to dismiss my concern by literally gaslighting me I would be inclined to both have given a better review and return to his establishment. Not going to happen with that type of (lack of) service. And don't charge me nearly $4 extra for naked big chunks of brisket.

Im from texas and i had high standards and this place met them all real good bar b que mac n cheese had a unique taste to it and it was super good

Came here wondering if it was any association with Rollin Smoke in Vegas and looks like it isnt, however was happy to find that their Mac & Cheese was pretty damn close and the flavor is similarly awesome. And that is sort of the problem in that the best thing(s) about this restaurant is the sides. The Mac and cheese was great and the seasoned tots on special were too (especially paired with the green Chile BBQ sauce which is by far their best sauce, try it!) but this is Rolling Smoke BBQ not Rolling Smoke Side Dishes... They didn't have any burnt ends or ribs so I got the 2 meat sausage and brisket. For well over $20, the servings were anemic compared to comparable BBQ restaurants, the sausage was cold but okay flavor and the brisket was so dry and cold as well (and given they brought the food out in like 5 minutes, I'm guessing it was just sitting in the back and wasn't warmed up at all) maybe their burnt ends and ribs are the highlights and I'll have to come back and try, but I just hope they don't come out cold

Visited this place for the first time an I was kinda surprised was pretty good and fast service. There's definitely a few other choices for bbq in the area an almost all of them have a few issues in my opinion an they just don't have consistency in their products they sell. This place was great all the meats were cooked very well none were dry an I was most surprised that the smokers an grills they use must be cleaned regularly because I can't tell you how many times iv been to a place such as like long horn where you have charred bits all over your ribs. Also the sides were good from the mac n cheese, cosla, beans, potato salad. The soda machine they must maintain pretty well because another thing I was shocked on was I didn't get some suprise sugar water for once like other places another quality product done right. The only reason I bring something like this up is my whole family is in the restaurant industry and every time I walk into a place I'm already critiquing it from every aspect it's just drilled into me. An also owners want some of these type of interactions from their customers most people just give 5 stars or 1 star and tend to never give you the whole story about their experience. An the cleanliness of the inside of the restaurant was great. All around a great bbq place I definitely will revisit an just forget about the other bbq places an tell my friends they should too.

Only suggestions/complaints I think I would have which really arnt anything to worry about is they might be under staffed but then again I didn't have any issues and my service was fast but maybe I just wasn't there during peak dinner time.

An I think I would have to suggest them to maybe start serving fries or some type of corn bread for an additional side. But even with the sides they offer were great just as it is. Maybe I'm just use to other places serving these items with your meals.

Disappointed, I ordered a take out brisket sandwich with a side of beans and potato salad. The meat had good flavor but was dry. The sandwich was nothing but sliced meat (sliced way too thick) and a roll that was too thick and not toasted or anything, just sliced. The roll too was dry. I asked for sliced onion on the sandwich and was told they didn't keep that on hand and only used raw onion in the making of side dishes. I had to finish my $14 sandwich at home with my own product. Really, first what BBQ restaurant doesn't keep sliced (or at least diced) raw onion available and second what does it take to slice an onion. It wasn't like it was late and the kitchen was closing. Next the sides were supposed to be 1/2 pint or 1 cup each. I measured them when I got home, beans were 1/2 cup and the potatoe salad was close to 3/4 cup. Beans not bad but nothing special tasted like they started with canned and dressed it up Potatoe salad could have been alright except that potatoes were under cooked and a little crunchy. I try my hardest to find something positive when I come across a place, I was a chef in restaurants for 20+ years including being classicly trained at the CIA in NY. The positive here on this meal was that the BBQ sauce had a nice flavor and a good tang, this helped me get the brisket down (I broke the sandwich apart a threw away the roll). Also if they worked on timing a bit the potato salad could work. For sandwiches they really need a fatty brisket and to get a different roll and prep that roll properly and get creative a bit, make the sandwich special (and get some pickles and sliced a few onions) . This is my second trip here and the first time wasn't much better. I'm not sure if I'll go back for strick three.
