Indigo 4 Restaurant — Restaurant in Charlotte Amalie

It is with great pause that I write this review as it is not my first visit to this restaurant. There is no question that the wait time is often long for food, but typically it has been worth the wait.

The day of all days that I was extremely disappointed was on Father’s Day of 2025 and we were also celebrating my dad’s birthday. I had a 1230 reservation with a 15 minute grace window and arrived circa 1240. We were seated relatively quickly; however, the wait for the food was absurdly ridiculous. We did not have food in front of us until 2:15.

Our order consisted of 2 orders of steam fish with provision and 1 order of the island saltfish breakfast. At around 2 o’clock, a lady who had not previously attended our table came to us and apologized for the wait saying that food would out in five minutes. Prior to that my eye contact with the first wait staff was met with glances and reassurances that the food was soon coming.

Interestingly enough, we had a few friends come in about 30 minutes prior to us receiving our food and they received their food about 10 minutes after we did and left before we were finished. It’s fair to say that the kitchen had slowed down by then but it is worth the mention.

So when our food finally came to the table at 2:15, instead of whole steam fish coming out they came out as boiled fish broken up with one coconut dumpling and some wilted greens when we were 1) told that it came with provision and 2) ordered the coconut dumpling and greens as separate sides. We wondered where the provision was but my parents were so hungry that they proceeded to eat. What I quickly learned from them when they started to eat was that the food was “tedious and tasteless” but at that point they were both so hungry and exhausted from waiting that they simply NEEDED to eat and were not interested in waiting for a new dish to be remade. I also sampled the fish and it really was tasteless!

Of note, my saltfish was extremely salty but that was the least of my worries. I did make a decision not to say anything as my parents were not comfortable with me doing so and I opted not to further disturb my dad’s celebration day.

I gave 2 stars for this experience because again, I have been to this restaurant before, have waited a long time for food but never this long and about 80% of the time have enjoyed excellent food! I’ll start with the DJ was good - Bread basket for $7 is what would normally start dinner off with complimentary anywhere else - bread was warm and good. We had ordered a double cut pork chop which was accompanied by black beans and Brussels sprouts. The pork chop was ordered medium - when arrived I was asked to cut into it to make sure it was done - strange but okay- it wasn’t done. There was blood still very visible and pink uncooked pork in the thickest part. Pork was sent back, all the while my wife’s dish of filet mignon arrived with a side of lobster Mac and cheese. As courtesy, during an extended wait the other parties dishes are usually held or taken back to be kept warm while the other party waits for their food to be properly cooked- not here! My wife waited with her food getting cold, for ten additional minutes. My pork had been brought again and once again I was asked to cut into it. I cut again into another thick part and again pink rare pork and blood. Are they not aware of trichinosis?! Pork was sent back again - another ten minute wait. My plate was not even rearranged when brought back out. The pork lay atop of the black beans messily, Brussels sprouts all messy and a scorching hot plate. Beans were now burnt and inedible and quite frankly I was just too annoyed at this point to eat. The bread took some of the hunger away and the aggravation quenched the rest. The filet was good, a little rough. The filet lay atop the smashed root vegetables giving the delicate taste of them, full on beef flavor. The lobster Mac and cheese should not be milky- it should be cheesy as the name suggests. My husband and I have been coming to the Virgin Islands for 14-15 years and this was one of the best meals I have had here! We had reservations at Blue 11 last week, but had to cancel them because I noticed that most of the courses contained seafood and I don’t eat seafood at all. I had heard so many good things about Blue 11 so I was bummed to miss out on a meal there. However, after doing some online research, I read about the Blue 11 chef expanding to a new restaurant. We went with no information or menu for Indigo 4 and it was the best decision!! I had the white cheddar stuffed airline chicken breast with roasted mashed potatoes and Brussel sprouts. My husband created his own meal with the Caribbean lobster, lobster mac, and three cheese and bacon scalloped potatoes. Our meals were spectacular! The food was piping hot and very flavorful. The restaurant also has a wine and cocktail list. The wait staff was so friendly and kind and were very attentive!! We left full and completely satisfied. We just wish we had room for dessert!
