I'd been to The Hereafter twice for drinks before dining there last night. The food had looked good from afar but I was shocked by just how good it was when I finally had a chance to try it.
The crudité pear dish was insane, just a lovely balance of distinct flavors, the whipped, blue-cheese based spread it was served with was so light and airy and a perfectly funky pairing to the ripe, spiced pears. The steak tartare was as good as it gets and was served with light and deliciously salty crisps that added a nice fat content to each bite. The charred carrots with pureed sweet potato and harissa was such a nice blend of spices; nutty, sweet and tart at the same time. And we finished with the trout which was perfectly cooked (rare in the middle) and served with a light and bright cilantro-based puree and a side of flash pickled fennel, radish and parsley.
I also fell in love with The Houe Dirty, a floral, heavily brined gin martini that finishes with a bouquet of Italian herbal notes, leaving a lasting hint of oregano.

The service was fast. The bartenders were attentive and patient with questions on a really busy night.
Atmosphere was clean and inviting. The crowd was lively so conversations were loud but not overbearing. It really felt like a popular historic bar you'd find in the city.
There is a fantastic drink menu with very different cocktails and flavors you find everywhere else. I tried the "drink like a writer" cocktail and do not enjoy it. I wanted to try something different, but this was outside of my familiar. It was well crafted in front of me, but the Haitian rum mixed with coffee bitters did not feel smooth going down. It wasn't a bad drink, just not a combination I enjoyed.

The vibe was stylish but casual, buzzy, and warm. The cocktails reminded me of The Maker lounge but with a twist. And the shining star was the food — I really believe it’s hard to have great drinks, great ambiance, and stellar food at the same time but they have done it. We ordered both the trout and the pork belly as well as the salad and the bread. I will always judge a place by it’s bread and butter and this was farmer’s market quality. The salad was a last minute add but actually surprised me — chips on top! Pork belly tasted like crispy bacon on the outside and was melt-in-your-mouth on the inside.
