So, I'm gunna start with some reference info, I often. Go to restaurants and think 'I coulda done better at home.' So I don't go to longhorn steakhouse cuz I cook a better steak. Now, being a line cook is a skill of its own. I could never cook for 300 people.
I felt like I'd I'd run a better kitchen than here.
Now I see potential. The wait staff are SUPERB. They did everything they could don't fault them at all.
But I don't know if theyre short staffed or poorly staffed in the back. They either have a short line in the back or some of the worst cooks. Let me see if I can do it justice.
The pros: Best potstickers I've ever had, but we had to remind them and they came at the end of the meal. Pork buns are DELICIOUS, some of the meat coulda been more tender but I've had far worse. 10/10 for a chain. Rice was delish which is strangely one of the hardest skills to learn in a kitchen.
Cons: The timing was wrong. Pork buns came out first, good. Potstickers came out last, bad. Didn't get udon til we left. Everything came out individually. Katsu was overcooked. Don't know if this was a mess up overlooking it or if protocall calling for it to be double fried (their sig ature) caused them to overcook it. Don't double cook the katsu (it's a cutlet, 3 minutes dude), or fix overcooking it in general. Wings could've (ironically) been crisper given the double fried Korean claim to fame. But we're tender and delish. Giant drums.
Kimchi was passable. Pickled radish was fine. Soda was flat (again I'm being lenient cuz what busines doesn't hit snags opening week, machine issues are a thing).
Im gunna go here again cuz there's great potential. I ordered the katsu cuz it's so simple, that any problems are indicative of the kitchen. It's a good baseline. Mom had the bulgogi (her complaints were all indicative of the dish. The onions aren't meant to be cooked into mush.)
But perhaps this is the growing pains. I know there were customers there that would never go back. Cut them some slack.

My family and I chose to visit Bonchon on the Fourth of July after hearing great things. We had five children and two adults in our party and were truly looking forward to the meal, having not eaten all day. We drove all the way from downtown Colorado Springs to interquest.
When we arrived, we were greeted by an employee (Asian man with glasses) who treated us rudely from the start. He seemed frustrated about seating us in the corner and, once we were seated, he continued to provide the coldest and most dismissive service I’ve ever experienced. At no point did he check in on us, ask about our food, or offer any basic level of hospitality. We felt ignored and unwelcome throughout the entire meal.
What made this experience even more uncomfortable was the sense of bias we felt. As a Black family, it was hard not to notice the stark difference in how we were treated compared to other guests. It was powerful and in no way subtle. From the lack of eye contact and conversation to the final moment when the bill was dropped on our table, with a $25 automatic gratuity included without explanation, and a cold, glaring, hateful stare from this man urging us to leave. The entire interaction left us feeling disrespected and stereotyped. The only thing I can do was write on the receipt, “BAD BUSINESS!”
This was not just bad service, it was the kind of experience that makes you question whether racial bias played a role. It was disheartening and disappointing, especially when all we wanted was to enjoy a meal together.
This is the first time I’ve ever written a review like this, and I’m doing so in hopes that it leads to awareness and change. No family should feel unwelcome or disrespected because of who they are.

Read moreI recently visited bon chon, and unfortunately, my experience left much to be desired. From the moment I arrived, it was clear that the establishment had some organizational issues. The waiting area was chaotic, with a mix of people eagerly waiting to pay and others patiently waiting to be seated. This resulted in a frustratingly long wait.
Once we were finally seated and placed our orders, the problems continued. It took a long time for our drinks to arrive. We waited for over 10 minutes, only to discover that there was a dispute among the staff regarding which server was responsible for our table. We emphasized multiple times we wanted to eat at the restaurant but still had people confused.
Our food eventually made its way to our table. However, the initial excitement quickly turned into disappointment. I ordered the chicken katsu, and it was a complete letdown. The chicken was dry and severely overcooked, resulting in a tough texture.
To compound our disappointment, after the food was served, our server seemed to disappear entirely. We received no further attention or service, leaving us feeling neglected and ignored. Frustrated by the lack of assistance, we made the decision to cut our losses and took our remaining food to go
Although my overall experience at bon chon was far from satisfactory, there were a couple of positives worth mentioning. The restaurant maintained a clean and tidy ambiance, which created a pleasant atmosphere for dining. Additionally, the wing sauce we tried was surprisingly delicious, offering a brief moment of redemption amidst a myriad of disappointments.
