My wife and I needed to celebrate and we did by going to a new restaurant. We’ve had Fiesta Jalisco on our list to try for quite some time and we were in the mood for some lovely Mexican food. When we walked in, it was packed. There were so many people there and it was great to see that so many people are enjoying restaurants again. It was also a sign that this place is obviously doing something right with their food. We were seated immediately and the service throughout our time was pretty good considering how packed it was. First we’re the chips and salsa which came with 2 different salsas - your typical red salsa (pretty mild) and also a cabbage based salsas. Both were good but I really enjoyed the chip. I honestly judge how well the complimentary chips and salsa is because it’s a first impression on the food. The chip was crispy and warm and stood up to both of the salsas. Great start! Then we were both starving and didn’t really eat after our 2 hour workouts. So we ordered 2 appetizers- the Fiesta Jalisco Nachos and Cheese Crisp. The Cheese Crisp gave a flatbread feeling and was honestly quite surprising different than the nachos or chips and salsa. This was very good. The Fiesta Jalisco Nachos were fantastic. Great amount of the 3 toppings we asked for and the chips stood up for the most part on not breaking. Honestly you’ll be missing out if you don’t get the nachos to start. We then ordered 1 entree each. My wife had a burrito (forgot the name) with meat, cheese, beans & rice while I ordered the Chicken Fajitas with extra cheese on the side. She enjoyed the burrito and believed it delivered on taste and value. Now these Chicken fajitas are my favorite thing I’ve had. And the bar was set incredibly high with the nachos! The marinated chicken was very flavorful and the onions and peppers were perfectly charred but not burnt. The amount of toppings they give you is plenty. The only thing is that you might need some extra tortillas to fit everything that you want, but other than that there’s NO complaints. This is a true definition of a 5 star experience. Fantastic food at every turn, enjoyable atmosphere and good service. There’s no wonder why this place is packed on a Friday night. I would highly recommend this place as the go to for Mexican food in Northern Colorado Springs.

It had been about 15 years since I last ate here at Fiesta Jalisco, so given that it has survived all these years and has maintained a 4+ rating, we decided to give it a try again. Service was decent enough, kept our water filled, $6 12oz house margaritas, full bar but no draft beer 😢. Salsa is thin but tasty and most likely the most flavorful item you will have here. As noted by others, additional salsa and chips will cost you extra money. While I understand food costs, this policy seems unusual as compared to other Mexican restaurants, and I found off-putting. We ordered a beef fajita burrito and a combination plate with a chicken taco, beef tamale, and cheese relleno. The restaurant was accommodating to my special request for all beans and switching sauces on the burrito. The food took about 15 minutes to arrive, which seemed long since we were 1 of 4 tables at 8:30 at night. Appearance of the food was typical and average for a Mexican restaurant. The best thing on either plate was the Ranchero beans. Everything else was just alright. We found the food to be very bland, not bad, just not flavorful. I guess for some, and by the reviews, for many, this is what they like. I'm in the camp that wants to eat something that is "wow" and not just meh. The restaurant does offer a military discount, but only applied it to one of our entrées which is also odd, but we appreciate any consideration given. So overall, service is what you would expect, and everything else is just meh. If you want food full of flavor, this is not the place. Certainly better choices in Colorado Springs.

We were greeted and sat immediately upon entering. We ordered drinks and they came out quickly. The daiquiri was delicious. The salsa was a bit spicy for this Midwesterner. The cheese dip was delicious. It also had a bit of spice but I felt it was just enough heat. Then our food came and the plates were huge. Definitely more food than I can eat at one time. Our server was very attentive and friendly. We appreciate when restaurants make an effort in presentation and when the food has flavor. I could tell this is a family owned business that cares about their customers. Prices were average to slightly above average. Thanks for the great dinner at the end of a long work day!

I absolutely love the food here, absolutely top quality every time. If you’re looking for great Mexican food, this is no doubt close to, if not, the best I’ve had in town. My family has been coming here for many years, and never had any issues.

The only major complaint is not about food but rather staff members who become a little scattered with many tables and make some careless mistakes that could be a big deal. More training and awareness is needed.

The credit card payment machine is near the door, out in the open, and our waitress left not only our credit card, but another tables as well, alone in the machine for 5+ minutes while she was in the back. No other staff was on the floor at the time and no one was monitoring the area. The machine beeps when the card is ready to come out and was very noticeable, anyone with ill intentions could have swiped the cards without any notice from staff. When confronted her response was astounding. First I waited by the card and when she came back she asked me if it was my card, well hmm she should remember and if not she shouldn’t trust anyone’s word regarding such a personal item.

Second, when I explained the seriousness of her carelessness her response was “so sorry, I forget things a lot. I got distracted back there.” Again, shows the lack of understanding Of the seriousness in her practices. She seemed annoyed that I even questioned her choice to leave my card unattended.

None the less, I would still go back because most of the staff is not like this particular person. Plus the food is amazing! Just pay attention when your credit cards are used...
