After a long Saturday night, my wife and I wanted to try a local Mexican food truck after driving past it multiple times. We stopped around 8:00 PM for dinner at Moctezuma Mexican Grill.
When pulling up to park in the parking lot, you’ll see their food truck comes alive. It has a tented seating area with music playing for all to enjoy.
While ordering, the owner Jose, was very patient with us and even recommended some options for us to try. With us having a full day of work under our belts and very little food, we came hungry.
After listening to his recommendations, we went with the Marinated Pork Nachos, Carne Asada Torta & (4) Birria Tacos (a la carte).
First let’s start off with the marinated pork nachos. This was an item that we were indecisive on the meat that should be on these nachos. This is where Jose recommended the marinated pork. Jose was spot-on. The marinated pork is bursting with flavor and compliments the cheese well. The chips held up strong to the toppings and I could not stop eating it. Fantastic item that will have me come back again in no time.
My wife really enjoyed her carne asada Torta. The beans they use are actually a house specialty and aren’t your typical pinto or black beans. The beans elevated this dish with the well-done carne asada.
The birria tacos come with their consommé and deliver in the flavor category. They have the option to make them “cheesy” which is their way of doing “quesabirria tacos”. This is the option you have to go with.
The amount of cheese they surround the outer taco layer with is generous and will lead to an infinite amount of cheese pulls when biting into their taco.
The consommé is a must with the birria. Their consommé is very onion & cilantro forward, which is something I enjoyed greatly.
The best part about all of these dishes is that they had their own distinct flavor profile. Sometimes in restaurants, some of the dishes are made with the same seasonings or sauces. That’s not the case here. Every single item was different which delivers a ton of value in my book.

I have an isue with the new app I used 6/1/24 for the first time. I ordered on the new app and discovered after I paid that they charged a 10% service fee for using the app. The owner texted me to let me know they will absorb the 5% swipe fee. I ordered two weeks before on the old app and there was no 10% service fee. After bringing it to the owner's attention, (showed him a screen shot of my receipt) he seemed surprised at the charge. He said he would research it and get back to me. He contacted me today, 6/4/24 to let me know the company that controls the app charges a 5% service fee for using the app and a 5% swipe fee for using a credit card. He told me " It's way too high and we plan on either negotiating or switching providers". The owner informed me today that they will absorb the 5% swipe fee. Read moreThe experience of a stand alone food truck service and food was top notch!!! This Mexican restaurant is 100% worth the trip to eat in a casual summer patio with a tent and a touch of Mexican decor in the parking lot.
The food was made with love for their customers. No kidding! I'm not from Colorado and I enjoyed fresh ingredients and extra touch in the food such as grilled onions, grilled peppers, and phenomenal hot sauces (mild and spicy). Also, they did make a mistake with one food order and went the extra mile to correct this (not Applebee's). The owner is sincerely friendly and obviously enjoys his work (again not Applebee's). Their burritos are worth it as they are plentiful of fillings. The tacos are delicious with plenty of garnish toppings. Vegetarians! The veggie taco is worth it. Just need to add more beans. Vegetarian Burrito is very filling. Queso dip is yummy (veg and meat options ).
