Large americano—so bad. It was $5+. Tasted like really bad brewed coffee. Couldn't finish it and had to dump it. Americanos are my "go-to" and not finishing one is a big statement for me. That's why I had to write this review. . . That's how bad it was. The service was almost as bad as the coffee. There were three people behind the counter; the "cashier" checked out the customer in front of me and then had a conversation him for at least 10 minutes knowing full well I was waiting to order. The barista was just standing there looking at me, the third was meandering around behind the counter but apparenlty couldn't take my order. Had to wait until the one cashier was done chit chating to order. DON'T GO. This place is hyped but falls sorely short both in quality/taste of its coffee and service. The physical space is nice though (had plenty of time to check it out while waiting for the cashier to get done gabbing). It's too bad the service and the coffee don't measure up. Hyped but awful. Starbucks Americanos are 5 stars in comparison—that's how bad this place is.

This has been my go-to coffee shop for the last few months since moving to the area. Consistently great coffee, a wonderful vibe and atmosphere, all the staff are kind, and their baked goods are made in house and delicious! Honestly I love Corvus. I've gotten to know many of the baristas and they are always excited to see a regular. I get an oat milk latte most days and they all know how to properly steam the oat milk to make it nice and sweet. Their cold brew (made in house with a Japanese drip maker) is wonderful and the cold brew drinks are like desserts. I wish they had a coffee loyalty program like a punch card or something since they have a lot of regulars and are a bit pricey. But either way I am quite loyal to this place. All of their pour over coffee options are unique and exciting to try. They also have a variety of whole bean coffee and the staff will help you pick one suited to your tastes. Whether you are looking for a space to host a little friend get together, a solo study spot, or a cup to go, Come to Corvus :)

The internal bakery is where something special is happening. The rye croissant was flaky on the outside, fluffy on the inside and a slight sourdough flavor without weighing you down with tons of butter. The roast vegetable focaccia was generous with an excellent medley of summer vegetables & the most perfectly roasted eggplant. Prices were a high (especially if you want to spring for a whole loaf) but I suspect is mostly due to the high quality, heirloom ingredients used. The downsides: They are still working out the kinks on running the shop. Employees seemed to jump around a bit between stations (pastry case, cashier, barista) so it wasnt clear on who/where to go. It took me awhile to get the barista’s attention to get some half and half after receiving my Americano. Lastly, I’m not seeing the quality in their standard espresso roast coffee. It is more of a lighter roast and seems flat. Give ā€˜em a shot, at least for the baked goods.

I have thoroughly enjoyed Corvus. It is close to home and the last few days I have been addicted. The woman that takes my order is always so sweet and it makes my day. Only thing is slight inconsistencies with the amount of milk used in the latte I order for my partner, which can happen when there are different baristas. We will keep coming here. The vibe is chill. Thanks guys 😊

UPDATE:

I realized that the reason I continue to come back is because of Gracie. I came back multiple times after this review but the last couple times were lack luster. The time before today, I walked in and the barista and another employee (both females) saw me standing there and didn’t ask me if I needed help. No one was in line. Took a few minutes, and I decided to leave. After that I stopped in for a decaf coffee and some pastries and while I ordered my drink ahead of two people, they had their drinks made (espresso based) before mine and they were out of the door. Once I got my drink it tasted like the shots were burnt, no depth, similar to coffee water. I didn’t complain. All times no offer to warm my pastries. Today, things just seemed off and not as smooth as the interactions I have with Gracie. I understand that pup treats are new, and I was excited for them too, but as a suggestion maybe make a button for a single treat option. I don’t particularly like buying more than what I am looking for and I shouldn’t have to offer to spend more to make it easier to ring up in your system. Or just make a sign that says you cannot purchase only one. Again, no offer to warm up my pastries. I don’t know if this is something that only Gracie does.

She does make those interactions super thoughtful and creates a meaningful rapport with customers in a genuine way that keeps you coming back.

A little disappointed with the followup visits. We will still be coming in for beans for now but really hope these experiences were just hiccups and this can be taken constructively to creat a consistent experience...

EDIT: $9 for an iced latte should be a crime....

I've been a regular at Corvus Coffee Roasters for quite some time now, and my overall experience has been a mix of highs and lows.

Let's start with the positives—the service is consistently excellent. The staff is friendly, attentive, and always willing to go the extra mile to ensure a positive customer experience. Whether you're a regular or a newcomer, you're sure to feel welcomed and valued.

However, the food offerings leave much to be desired. While the menu has a decent variety, the execution falls short, particularly with the pastries. It's disappointing to find that the pastries are often overcooked, bordering on burnt. This issue has been a consistent letdown, and it would be great to see improvement in the quality of baked goods.

The ambiance of Corvus Coffee Roasters is a bit of a miss. The space comes off cold not only with the concrete design, hard uncomfortable chairs but with the lack of christmas decoratiion. The echoey acoustics can make it challenging to concentrate or hold a conversation, especially when trying to work or take calls.

One notable drawback is the lack of festive offerings on the menu. As a coffee shop frequented by many during the holiday season, it's surprising that Corvus Coffee Roasters doesn't offer any fun Christmas drinks. The absence of whipped cream and peppermint-flavored options seems like a missed opportunity to capitalize on the seasonal spirit.

Moreover, the absence of matcha on the menu is a significant oversight, especially considering the popularity of matcha beverages. Introducing matcha-based drinks could attract a broader customer base and cater to those who prefer alternatives to traditional coffee.

In conclusion, while Corvus Coffee Roasters excels in service, there are areas that need...

First of all, don't listen to Jared and his three star review. It doesn't hold up....at all.

I came and visited this location mid day on their first day open. The shop was BUSY! Even so, it was a well oiled machine & the employees had their Covid-19 precautions locked down. I had at least 3 people (two of them families with large orders) in front of me. I waited in line no more than a minute and waited for my drink for no more than two minutes. The teamwork behind the counter really shined through during my visit. At no point did I get the impression that the baristas behind the counter were new to their job. They worked as if the shop had been open for months, instead of just hours. The quality of the coffee and food met the excellent exceptions I have of Corvus.

For the same price as Starbucks, you'll be met with above average customer service, some of the best coffee & pastries you'll find in Denver, and faster service walking in than you would receive going through a drive-thru.

Stop by, you surely won't be disappointed! Keep up the great work Corvus Littleton, I'll be coming back as...
