Miguel's Mexican Cuisine — Restaurant in Corvallis

Okay. Let me just tell you how it is: this is the best mole I have had since I was a little girl.

I initially decided to go to Miguel's because it is a convenient walking distance from my work. I did not know that this would become a new favorite. On the first bite, my eyes actually glazed over because I was instantly teleported to a life I thought I had left behind when I moved to Oregon. I have lived here for 13 years now and I have never had such a euphoric experience from one bite of food. Ever. If you are looking for something authentic, with a passion for the craft and dedication it takes to make amazing cuisine, you need to get your butt down to Miguel's.

It took so much strength for me to break away from my chicken enchiladas en mole to write this review. This is also the first review I have ever written in my life. I have lived in three different continents, and this one food truck has got me in a state of euphoria I did not know possible.

Absolutely stellar food Mexican food from a fantastic owner.

This food truck is in the heart of Corvallis, and I'm so grateful for its arrival. A lot of options, all with generous portions and cooked perfectly. Everything is rich in flavor and a delight to the palate. The cost is competitive with other places too from my experience. My favorite dish is Huevos Rancheros, and my wife and I think the owner makes this better than anyone in Corvallis.

Like most food trucks, there is usually a bit of prep time after ordering before you get the food, but the owner is quick and efficient, so I never wait long. Effectively no dining area, so definitely expect to take the food to go.

Perhaps my favorite reason for coming to this truck is the owner himself. He is a truly friendly person, a lovable smile and a sincere desire to provide excellent quality food. Highly recommend this to anyone looking for great quality...

Miguel’s became a quick favorite when we moved last year. It’s the only Mexican food in Corvallis that I crave regularly, and we have nothing but good things to say about the staff and customer service we have received. My go-to dish is the chicken fajitas. There is a spice in there that is slightly different and I love it! My partner and I just tried the chicken mole and it could quickly become my new favorite. I can’t claim to offer anything about authenticity, but I am pretty picky about the moles that make my good list. This one gets close to the top for me. Amazing depth of flavor, just a bit spicy, and no weird sweet taste. The best! Also the portion sizes are quite generous as others have said. Miguel’s is a must stop...
