New bbq place in town, went on Friday night. And I gotta say I’m disappointed. I’ve heard the owner of this place owns a couple other restaurants around the area, but it doesn’t show at this location. First off, nobody was in there on a Friday night(red flag) secondly it took 10 minutes to get our waters and for a waiter to come over, mind you there’s only 3 other tables in the whole place that have customers. Then they’re out of brisket? Their main menu item they are out of, 2 weeks into opening and nobody there and they’re out of their main item? And no cornbread either. It’s sad because I thought maybe they’d actually be smoking the meats in the back but what we got was nothing besides small portions, bland flavor, and apples quality food. For 80$ for 3 people, I would figure maybe we’d get something of value but I’m mistaken. The Cole slaw portion is laughable, their sauces are straight from a food supplier, their rolls are literally just Hawaiian bread slider roles from Weis, the ribs were small and not smoked or grilled, mashed potatoes really subpar, tallow fries frozen out of a bag. The inside atmosphere feels dead and weird, not lively or welcoming. Not to mention, they don’t give you plates! They serve all the food on 1 metal tray like your a prisoner, and then your expected to all eat from 1 plate. I’m sorry that’s disgusting and I get the idea of “bibs” in the name but that’s just plain stupid to try to have an elevated restaurant but the internal ideas are of a snack shack somewhere. The only highlight I found was there’s unlimited chips and salsa for $3.99. However, if you order it, they don’t offer you a refill on the chips and then your main comes so it feels like they discourage their staff from giving more. First off, the meat. Everything from the burnt ends to the ribs is smoked to perfection. The burnt ends were fall-apart tender, and the ribs? Ridiculously good—juicy, flavorful, and perfectly seasoned. The pulled pork was rich and smoky, and every bite had that deep, slow-cooked taste you can’t fake.
Now let’s talk about the sides, because they’re not just an afterthought here—they’re next-level. The chips and salsa were hands down the best I’ve ever had. I wanted to drink the homemade salsa, thats how good it is. The cornbread deserves a spotlight of its own. Seriously, it’s the best cornbread I’ve ever had—moist, slightly sweet, and with a golden crust that’s just perfection. I’d come back for that alone. And don’t even get me started on the homemade ranch—creamy, tangy, and full of fresh herb flavor. I ended up dipping everything in it. They need to bottle that stuff!

From the moment she arrived at our table, Chi’s warm personality and genuine smile set the tone for the evening. She immediately asked if we had ever been there before. We told her it was our first time, but that we’d been in town the week prior and had made a point to come back after the next game specifically to try Bibs Ribs. She seemed genuinely excited to guide us through the menu.
Chi gave excellent recommendations, not only on what to order but also on portion sizes and customer favorites. On her suggestion, we started with the brisket queso, which was a fantastic opener—rich, flavorful, and perfect for sharing.
For our entrees, we went with a medley of chicken, burnt ends, and brisket. Everything was cooked beautifully, with great smoky flavor and tenderness. The sides were just as impressive as the meats and really rounded out the meal.
