Well at first I ordered the Reuben, and I know it got a lot of Great reviews, The pictures looked great, all the food in the pictures looked good, what I really wanted to order they didn't have anymore, so that's why I decided to go for the Reuben, but it wasn't for me, it was very sour and oily to me, I've eaten a lot of meat alternatives, so when I saw this I imagined that this would be somewhat like those in texture, I expected it to feel kinda like meat, like the meat alternatives at City O City but it wasn't. It had the texture of sliced veggies, and I get that its a Reuben and that it has SOUR kraut and it's supposed to be somewhat sour, but the meat alternative, which wasn't a meat alternative was also sour, so for me it was double sour, and nothing from the texture or flavor to cut the sour of the sour kraut, it wasn't like a regular Reuben at all or what I expected it would have felt like or what I remember a Reuben tasted like in the past.i could deal with sour if the other ingredients counter acted it , Anyhow, I couldn't eat it after a couple of bites, I was kinda grossed out, and so I had to take it back....Maybe they could have added chips to cut the sour???... and at $15 for JUST a sandwich, it's quite expensive. Different strokes for different folks, I can see a lot of people love it though in the reviews, The guy at the front was very nice about it and took it back and I was actually scared to try something else and not like it so I went with the safe alternative and ordered the ceaser salad instead, I liked👍 it ok, though it was a small ceaser and it cost $11, which was totally pricey for what you get. As I waited for my salad I ordered a cookie 🍪 and that was good....hard to mess up a cookie. Will I come back again? Probably not ...I don't live in Colorado haven't been here for 4 years, and there just seems to be be a lot of new places to try. I just love how many vegan option restaurants they have here now, when I turned vegan over 10 years ago they didn't exist. I live in a small town in Az now, there are ZERO VEGAN restaurants there, where I am anyhow, and the grocery stores are very limited on what they carry !

Read more(Updated 7/25/25) I have been coming to Gladys for years at their stall on the other side of Edgewater Public Market, but it feels like with the move into the former Meta Burger space (RIP), they have perfected their concept. The seasonally-changing menu provides combinations of flavors you will simply not experience elsewhere in Denver. I'm always blown away any time I try a new dish, often coming away thinking it is my new favorite thing. With the change in spaces, they've doubled the menu size, introducing several new delicious items like the Greg Burger, but after seeing what this team has been doing in terms of presentation in takeout containers for years, it's great to see it all finally come together on ceramic plates. I love how nearly everything on the menu makes a vegetable or legume the centerpiece of a dish rather than using meat substitutes, and that their menu relies so heavily on locally produced Colorado produce.
My first time dining in, I had the Potato Croquettes which were creamy and robust in combination with the smoked garlic mousse; the Succotash Flatbread which had a perfectly bold combination of spicy corn, tart lupini beans, and nutty bean spread; and the Strawberry Rhubarb Cake which was served warm and had a subtle fruity sweetness. As always, the staff were extremely friendly and attentive throughout the entire meal. The prices per plate are also very reasonable for the amount and quality of the food being served, but there’s plenty of options on plate sizes and prices depending on your preferences.

The quality and attention to flavor are exceptional, and they focus on celebrating the flavor of plants over recreating meat-type products like many other vegan places. 11/10 would recommend!! An aside: I do hope they open their own standalone restaurant because I think it could be wildly successful being a more upscale, sophisticated plant-forward dining experience than a vendor in a dining hall next to chicken sandwiches and gyros. The price point is more similar to a small-plate, sit-down restaurant than what people typically go for in a dining hall. Regardless, I'll be coming back to eat more!!
Update 8/27/25: I am SOOOO happy y’all have transitioned into a full sit-down restaurant! It’s beautifully decorated, and the food is fabulous as always. I had the tomato funnel cake, burnt scallion gnocchi, and, naturally, the dark chocolate and sea salt cookie.
