Unfortunately, due to a chili pepper allergy, I haven't had one of my favorite Thai dishes, Tom Yum soup, in a long time. After finishing our dinner tonight, we had the pleasure of meeting the owner, Chris, right before we left. Out of curiosity, I asked if there was a way to make Tom Yum without the chili pepper and Chris went out of his way to check the ingredients and labels for me so I could possibly order the soup on our next visit. Sadly, no, Tom Yum is made with a paste containing the pepper I'm allergic to so creating the soup without the base wouldn't be the same flavor profile. I was impressed that he went to the trouble of checking but then as we were just about to leave he came rushing back to our table. He mentioned my allergy to his wife, the amazing chef at Hills to Sea, and she said she could do it by using the base of another soup and building up the flavors/ingredients found in Tom Yum. A few minutes later they both came to our table to deliver a To Go container piping hot with the most flavorful Tom Yum soup....sans chili pepper! I tried it right away and it is amazing. I may have burnt my tongue but it was worth it! If I could give more than 5 stars, I absolutely would. Small business owners like this need our business and deserve all the success coming their way. Read moreI had never been to Hills To Sea but was very excited to try it and support a local small business. I will never be back, ever. The place should be ashamed for what they charge and the customer service they provide.
We purchased a gift card from local flare to try it and you have to spend $30. We get two apps and two meals and our bill is $55. I run in to pay, show my coupon and the lady says “this doesn’t work on takeout”. No other way to explain it, just no. So I pay the bill, go out and in the smallest print ever known to man it says excludes takeout. I check every other restaurant coupon I have and it works on takeout everywhere else. So the price, for the quality of food we received … it ruined my Friday night. For a small business you should be ashamed.

Well ... on Saturday, 5/25 we went back to Hills to Sea to use our Local Flare Gift Certificate we couldn't use the last time. And I have to swollow a little pride here and do the right thing and give credit where credit is due. For as much as I was upset and taken back by my first experience there, the same can be said for the second experince and in a good way.

There will be many more visits to follow. The food is great. I have tried something new every time and I have been impressed with everything. They have lots of options and both the sushi and the eclectic Asian fusion are solid. Not just solid, but stand out. We enjoy the BYOB and to take it slow. We order an amazing app (fried pork dumplings are my current favorite) and enjoy a leisurely dinner. The atmosphere is quite nice. Stepping inside makes you forget you are in a shopping center in Ephrata. I like the fish tank! I'll take better pictures next time.
