This was the last stop for my partner and I before me left Eureka after a long weekend, mini-vacation. It's tucked inside an unassuming building, home to a collective of sorts - comprised of the coffee bar, a coffee roaster, and a local brewery. The coffee bar itself is small, but there's plenty of seating scattered throughout the rustic, welcoming building. The barista there was so friendly and helpful, answering all of our questions with a warm smile and a keen knowledge of coffee/tea. As someone who doesn't like overly sweet drinks, they suggested a cacao latte sweetened with agave. Easily one of the best mocha-style drinks I've ever had, it highlighted the fruity and acidic notes of cacao, balanced by the bold espresso. My partner got a beet-based tea latte, which was also lightly sweet with a kiss of heat from fresh ginger and other warm spices. We also had a nice chat with a friendly local (and likely regular) who came in for her daily latte. Truly a gem of a place, the kind of inclusive local spot you want to support as much as possible. Read moreI’m from out of town and wasn’t sure which coffee shop to try and sooooooo glad I went to Just Bee Coffee bar!!! I ordered an iced almond milk latte with one pump sf vanilla. First off, it was amazing coffee and probably didn’t need the sweetener. However, the barista totally listened when I asked for just a smidge of sweetener for taste. I appreciate that so much!
