The Experience:
We had walked by this place waiting for it to open for weeks and were happy to see people eating there this weekend so we gave it a try. We were greeted by one of the owners and sat at a corner table of our choosing.
As we looked over the menu we spoke with Nishant about some of the items on the menu as well as the overall idea behind this concept. He told us that their goal was to open up a space that was unlike any other In town with an emphasis on food quality, execution and attention to detail.
Our drinks were served and I will see it took a little more time than normal to get them but not the end of the world.. The star of the show was the food. Where to start.... The lobster dish not only was plated well but the flavors on the tails were amazing. Grilled perfectly and the protein was not rubbery so they know how to cook this. The goat Chettina was well presented with my only criticism being that I had to navigate some very big and small bones but the meat was very tender and well flavored. The sauces are unique to each dish as as anyone who has been to Indian restaurants will tell you... alot of the times this is not the case.. They build these flavor profiles separately and each stands alone as its own unique dish which makes this place different.
The Palek Paneer hands down is the best representation of this type of dish I have ever had. The freshness of the cheese is one thing but the silky smooth finish of the spinach... WOW... My big complaint about this dish at the places I have been is that the cheese gets granular with a sandy type finish. Not here. This was fresh, smooth and just melted in your mouth with each bite.. when you add the extra flavor texture of the spinach to this its a home run.
The Naan's were thinner than I am used to but very good just different.. The fresh Rosemary was just incredible. That hit your nose as soon as they brought the food out. Freshly cut too.
The Rose Rosmalai was just great and something we had never tried before and to say it continues the theme of uniqueness that we found at this restaurant would be an understatement. The cheese dumplings were great but the rose forward smell and the saffron milk together just made for a perfect flavor explosion... what a great way to end the meal.
Overall Impressions:
They are new, they are young and they are here to prove that you can be unique in this space which is difficult but not impossible. Everything we had here was different than anything we have had at other Indian restaurants so as long as they continue this level of execution the people will come.. they are going to be successful. Their food preparation and quality are already at a very high level. They are meeting the moment and a few small things aside this is as close to culinary perfection as one can get. As a resprentation of several parts of India I would say they know their food and their menu reflects this so there is something here for everyone.
Thank you to the two owners A.J. & Nishant for their hard work and for taking the time to talk with us. We wish you nothing but continued success. You will do well and this is a welcomed and unique addition to the Fort Collins food scene. Indigo is definitely a 1 of...
Read moreWe stopped by Indigo this week for lunch. They've been open for a month. The food was delectable, the service was incredible and the ambiance is fantastic. We were greeted and seated to our convenience. This is not your "Indian Franchise" restaurant, they're authentic and one-off which is always refreshing.
They cater to American spice palettes as well as the more authentic Indian spice palettes, which is quite rare as there are only a few options around.
We ordered a few different things to test out the authenticity of Indian food. Detailed review below.
Goat Sukka - we got this "medium spicy", and it was perfect. The spice was perfect, the goat was tender, cooked well and delicious. The coconut was soothing and made for a nice topping.
Lassooni Gobi - this is their version of the Gobi Manchurian. The cauliflower was fresh, and battered light. It was made fresh to order which is always nice to see. It was a good sized plate too.
Angara Chicken Tandoori - The chicken was fresh, made to order, and sizzled on our table. We loved the spice level, and the marinade had seeped into the chicken, which was refreshing to see.
Schezwan Chicken Fried Rice - It was somewhat of a surprise to see tomatoes in the fried rice, but it was freshly made, and delicious. The spices really came through, and it was refreshing to have a nice indo-chinese fried rice.
Veg Hakka Noodles - Was delicious, light and flavorful. The noodles were a bit oily/soggy, could be improved, but pretty good nonetheless.
Butter Chicken - This was freshly made too, which was refreshing. The chicken was flavorful. The sauce was brilliant.
Chili Naan - This was thin, fluffy/crispy just perfectly cooked to order. It's nice to have a naan that is not "thicc". The chilis were subtle and we loved this as the perfect medium for the butter chicken.
Mango Lassi - this was freshly made and topped with saffron, which was refreshing, but with all the food, this was a nice cooling option, but quite heavy as it is pretty thick in consistency.
Malai Kulfi - Its a hearty offering, with two scoops of kesar malai kulfi, topped with tutti fruity.
Overall, the friendly service, the great selection of delicious food, the chill vibe and convenient parking made this a great experience. It's wonderful to see more "good" Indian options in town along with Bawarchi.
Give them a try and you won't regret it. Great service. Great...
Read moreWe put in a takeout order of Palak Paneer, Hydrobadi Eggplant Masala, Lasooni Dal Palak, and vegetarian Tandoori Momos. We requested all dishes be at the medium spice level. We received 3 containers of white rice to go with the dishes. The service was on time, the food was packaged well. The Eggplant Masala was mostly tomatoes and onions and had very little eggplant, and was savory but tended toward acidic, with little of the creaminess we associated with eggplant Masala. The Dal Palak was so heavily spiced with herbs that they overwhelmed the lentils and oversaturated our taste buds, with bits of extremely hot green chili making the dish unpleasant. In contrast, the Palak Paneer tended toward watery and relatively bland. The momos were decent and nicely spiced, though there were only eight in our order. The rice was dry and we had the sense it had been cooked hours before. We had high hopes in trying this new restaurant based on the good recommendation of an acquaintance, and so perhaps they are still working out their kitchen routine...
