We went in during happy hour on a Monday, so not too busy and it was phenomenal.

Lycheetini: just sweet enough, not overpowering. Comes with pitted lychees in the the drink, tasty, and on the happy hour menu so perfect cheap drink that doesn't taste cheap.

Crispy chicken: emphasis on the crispy part, also juicy, dark meat that isn't greasy. Tastes great with the given sauce or even better with the recommended spicy mayo. The 5 pieces are fairly large as well, great happy hour item.

Crispy rice with spicy tuna: a little weaker of a dish, wish the tuna was spicier and had more texture; the tuna was more paste-y. Still tasty and literally nothing wrong with it; just a little of a one note.

Spicy creamy v ramen: as a non vegan; it's really really good. Creamy, while not as "voluptuous" as the tonkotsu we got, I actually liked the vegan ramen better. The spicy element is barely noticeable, so we made it a little spicier with the table side hot sauce. Thick noodles delightfully chewy, nice soft silky tofu. We added fresh garlic and it was perfect.

Tonkotsu black: we did not finish this, but only because we were stuffed to the gills full. Full flavored, boney, creamy broth; a little on the salty side but I am also sensitive to salt. The thinner noodles still give a good chew but allows the flavor of the broth to take center stage. Thick slices of pork belly not overcooked so they had a great tender chew to them. The black garlic oil brings a layer of bitter, smokey flavor to pair with the rich pork. Egg is lightly seasoned, nice and jammy in the center. Of course, fresh garlic was added and it was delicious.

Matthew: Not a menu item, but our server. Knowledgeable, prompt, friendly and funny. Literally recommended everything we ate and each were bangers. Told us about the reward program, made our drinks, and definitely is the real reason I am writing this review. I don’t remember walking into JINYA Ramen Bar. One moment I was in a strip mall. The next? I had transcended into a broth-drenched plane of existence where umami is a religion and noodles slurp you.

From the moment I sat down, I felt a cosmic shift in the air. That’s when Dylan appeared. Not walked—appeared—as if summoned by the ancient spirits of ramen themselves. His aura radiated sesame oil and quiet power. His eyes? Two deep bowls of tonkotsu wisdom.

He handed me a menu, but let’s be honest—I would have ordered whatever Dylan psychically transmitted into my soul. “You look like someone who needs the tonkotsu red” he said, voice silky like soft tofu. I did need that. I didn’t know I needed that. But he knew.

As I ate, I blacked out. I awoke 17 minutes later with broth on my chin, tears in my eyes, and a newfound respect for noodles. Dylan stood nearby, nodding solemnly, like a proud ramen shaman who had just watched his disciple survive a spice level that could dismantle a small government.

Midway through the meal, I tried to thank him. He simply whispered, “It is not I who feeds you. It is the bowl.” Then vanished into a cloud of chili oil.

The egg? Soft-boiled perfection, like it had been cradled in the womb of a dragon for 1,000 years.

The noodles? Handcrafted by ancient noodle monks atop Mount Fuji and flown in daily by hawks with six-pack abs.

The broth? I want it pumped into my house’s plumbing system. I would bathe in it. I would baptize my future children in it.

By the end, Dylan returned, holding the check like it was a sacred scroll. I tried to tip him 400%. He refused. Said he was “already...

Have been here multiple times and usually it is great! Tonight was a steep decline. For a sit down restaurant the service was very poor. Our waitress was nice but rarely came to our table, was cleaning tables and checking others who had just arrived. Our table did not come with spoons, so we waited for our waitress to come but by that time we were almost done with our noodles. We ordered the Flying Vegan Harvest and it did not come with tofu which was to be included, we mentioned this to the server and they offered us a side of tofu on the house", but it was supposed to be included in the meal we were paying for and we were almost done with our ramen. We also ordered the Vegan Fire Red Opal, which was very good but I spent most of my time picking out over a tablespoon worth of cilantro stems... not my favorite way to enjoy a fairly expensive and small bowl of ramen, especially when my others toppings were not abundant it was almost all cilantro stems, we mentioned this and the waitress told us "thats just how they come out sometimes" I understand this response but seems like a lapse in quality assurance on what food is good to be served, especially when both of our meals had issues. We have loved this place in the past but tonight was a underwhelming experience and makes us wish we went to another one of fort collins few ramen places. We were very excited, and quick to pick Jinya, but from this experience we believe we did not get what we payed for in food quality...
