The Cache is a good medium – grade restaurant.
The glass topped roof for larger parties is beautiful at night end has a great view of interesting parts of downtown. The decor is nice and fits a common theme. The food has lows and highs.
The scallops, though few for the meal, were probably the best I have had. The included savory cake was delicately crispy and well executed.
The crème brûlée is too thin, not in texture, but in depth. The layer of caramelized sugar on top overwhelms the crème and turns into a hardened candy layer on your teeth. The crème itself was excellent, but half as thick as its ideal minimum.
The Buffalo ribeye was too fatty and not particularly tender. The regular ribeye was far better, and slightly larger. This of course will vary by cut and preference (I prefer no sizeable sections of fat on my steak, but some of my friends have the opposite preference).
The chocolate cake was good in the sense that it tastes like the upper end of a high-end grocery store cake. Too much frosting, cake isn't as soft as moist as it could be, but good overall.
The price was impressively cheap, especially considering cost of food overall in April 2025. For seven people, two children included, it was about $500 including drinks for 2. Read moreMy wife and I went here for "Date Night" prior to a show at the Lincoln Center. We had a fantastic dinner. From the moment we walked in we were promptly greeted and seated. Service was quick and extremely personalized. Trevor was our waiter, and his service is exemplary. He was able to help pick menu items and he was extremely attentive and friendly without being overbearing or "chatty."
Drinks were spot on, with one of the better Sazaracs I've had in FoCo. Trevor was also able to help my wife pick a wine that she loved.
We started with the fall bruschetta, which was a very nice dish. The mushrooms are very nicely cooked, and the presentation was great. One small critique would be to cut the arugula smaller, as the full leaf makes the dish quite messy.
My wife got the bison ribeye and I got the scallops. Both were awesome, and I would highly recommend either one. The bing cherry demi-glace was to die for! Both proteins were cooked appropriately, as well the vegetable side dishes (not mushy).
We finished with the coconut cream pie, which is a reason until itself to visit this restaurant. It was creamy with a not-too-sweet filling, that just left you wanting more.

Read moreI had a very lovely dinner at The Cache recently. I was part of a group of 10 on a Sunday night and the restaurant seemed mostly full.
Positives: Food. The refined fare and relatively small menu were a welcome change to huge servings and a multitude of options that are standard in Fort Collins. I had the bone marrow first course and lamb shank main. Both were cooked very well, were flavorsome and a good portion size (not large but not too small either). The wine list was also one of the best in Fort Collins. Service. I found the service efficient, attentive and friendly; no complaints there. Ambience. Deco, lighting and music all added to the experience of sitting in a comfortable, contemporary restaurant.
Negatives: When I called to book for 10, I was told that a) a manager needed to call me back to confirm the booking (which I thought was strange), and b) that as we were in a group greater than 7 people, we needed to order from a limited menu to ensure we would receive meals at the same time. The manager called me the next day to confirm and on the night, we requested the full menu and were given it.
Overall: Quality service and food in a relaxing and contemporary setting. As long as the restaurant/kitchen sorts out its processes so customers aren't disadvantaged by being in a large-ish group, I'd recommend it and...
