Don't get me wrong- they DO have good food here. What they don't have is consistently good food or even consistent food. I got the green chili burrito for a while. Loved it. Then one time my burrito had a big chunk of fat that I had to spit out. The next two burritos were the same. I didn't get a burrito there for a long time after that. When I finally returned, they had updated and expanded their menu. I decided to try their chili relleno burrito. It was a tortilla with 2 oily chili rellenos. That's it. No beans. No sauce. It was awful. I decided to give them another chance, however, because I wanted to try their veggie burrito. I got one. It was OK. Good enough to add to my to my morning rotation. But the second one was different- lots of guacamole, lettuce, and tomatoes but little else. Then the next one was delicious- lots of tasty rice and beans. We decided to try it again because it pops up on so many Reddit threads as being the best Mexican food in town, so we thought maybe we just didn't order the right things or they were having an off day on our first try.
We ordered Carnitas Tacos, a Smothered Pollo Burrito, and a Barbacoa Plate. Everything we had was so incredibly bland. No flavor, it was all cold, the Carnitas were extremely chewy, and to top it off, they didn't give us our Tortillas for the plate, and we didn't realize until we were already home, so it wasn't worth going back for.
We really wanted to love our food, but I don't think we'll be trying this place a third time.

Read moreThis is hands-down the best Mexican hole in the wall place in Northern Colorado. The barbacoa and adovada taste correct, and very few other places even know what those are. I like the fact that they don't do the gringo trick of filling the burritos with rice, that's just not right. You know it's good because everyone else in there is speaking Mexican, and they always seem to be busy. They have not figured out what hatch green chile is, I wish they would. The atmosphere is extremely basic, but you know, that adds to the honest ambience. This company provides most of the tortillas for the Mexican restaurants in our area. If you arrive early in the morning you can see them coming by to pick up stacks of tortillas. It does help when ordering if you can speak a bit of Mexican Spanish....
