We visited Firebirds Woodfire Grill this past Saturday to celebrate my wife's birthday. We've been to a different location before and had a great experience, so our expectations were high going into the evening.
Let me start with the positives: the food was excellent, as expected. My wife's steak was initially prepared incorrectly, but the manager stepped in promptly and handled it professionally. The bartender was also on point. We appreciated their efforts and attentiveness throughout the night.
Unfortunately, the same can’t be said for our server, Mark. To put it plainly, his service was among the worst I’ve ever experienced in a restaurant. Here’s just a sample of what went wrong:
Drink orders were mishandled from the start. My drink arrived within five minutes. My wife's took nearly ten. The kids' drinks were completely forgotten, and when we asked about them, he assumed we ordered lemonade which we didn’t.
My wife's drink was incorrect. We let that slide, thinking it was just a minor mix-up.
Throughout the meal, Mark rarely checked on us. At no point did he seem aware (or care) that we were there to celebrate a birthday even though we mentioned it when we were seated.
We ordered a glass of wine for my wife that took over 20 minutes to arrive. I had to ask about it multiple times. He kept coming back to confirm what we ordered, went to the bar, came back again unsure, and even hovered over the POS screen squinting at the order like it was the first time he’d seen it.
He forgot to bring the kids’ desserts. At that point, we were too frustrated to even bother and just wanted to leave.
The final straw: when he brought the check, he said, “You guys could talk about all the mistakes I made, but you have to get out.” That was completely uncalled for. He clearly knew he had dropped the ball and chose sarcasm instead of owning it.
To make matters worse, we had a clear view of the back where he was goofing off multiple times instead of taking care of his tables. The restaurant wasn’t even particularly busy at the time.
I don’t like writing reviews like this, especially when the food and other staff were great. But if Firebirds wants to uphold the standard we've seen at other locations, they need to seriously rethink who they allow on the floor representing their brand. Mark was not just inattentive he was careless, unprofessional, and dismissive during what should’ve been a special evening for my wife.

As a longtime patron of Firebirds, dating back to its original location in North Carolina, I had high hopes for this restaurant. At one point, the food and service met Firebirds’ high standards. Unfortunately, that has changed.
After several subpar meals in a row—borderline garbage—I brought my concerns to one of the managers. Later, during a visit to the Plano location, a staff member mentioned that Steven, the manager of Grapevine, wanted to speak with me. This surprised me, as I had tried to address my concerns with Steven on multiple occasions in the past, only to be consistently ignored.
I’ve spent thousands of dollars at this location and have brought numerous clients here, so being dismissed repeatedly by Steven speaks volumes about his lack of professionalism and concern for the restaurant’s standards. Despite this, I made the effort to visit again—despite no longer living in the area—to give him an opportunity to address the issues. Instead, Steven blew me off yet again, behaving in a shockingly unprofessional and disrespectful manner.
Rather than addressing my concerns about the poorly prepared food and declining service, Steven rudely dismissed me and made no effort to rectify the situation. His tone and demeanor were condescending, making me feel unwelcome and unimportant as a customer. When I approached him in person, he brushed me off, saying, “I can call you.” There won’t be a need for a call. I prefer to handle issues directly and face-to-face. Showing up in person was a courtesy on my part, especially after the consistently poor service and declining food quality at this location.
If this restaurant were properly managed, such conversations wouldn’t even be necessary. While one review and one lost customer may not affect Firebirds in the big picture, it’s clear that this location is falling far short of the brand’s standards. They can’t even toast bread or prepare a salad correctly half the time.
For a restaurant that markets itself as upscale, Firebirds in Grapevine is anything but. Customer service and food quality are clearly not priorities here. I will not be returning and strongly advise others to avoid this location if they value respectful treatment and quality food.

Before I say anything, yes i should’ve called the manager over and speak to them about the dinning experience, but it seemed like we got singled out that day where other tables got touched, but ours was just a glanced over. I’m not the type to make a big deal out of poor quality food so I did not send anything back and just ate everything. We spent $223 for 2 people— got 3 drinks and 2 appetizers 2 entree and 1 dessert. Drinks were great, it went down from there with foods. We got ahí tuna app and wings for the table. I got 16oz prime rib with a side of ahi tuna, the other entree was a Baja pasta and I requested it be toward the chuck-end side of the prime rib since it’s more fattier and more flavorful, I explained i did not want an end cut, i clarified there’s 2-sides of prime rib, loin end and chuck end since our server seems not that knowledgeable about the food. Food came out at a good time, Ahi tuna app was poorly made, probably cut with a dull knife or inexperienced, herb rub was barely on the tuna so everything tasted bland, tort slaw was well made probably the only good thing about the app. Smoked wings seem to be extra smoked, overcooked and dried out. Baja pasta was runny and flavor was hardly there, tasted watered down. Prime rib came out as end cut, with barely any herb rub or peppercorn on the cut—meat was tough inside and outside crust was extra hard, definitely wasn’t broken down all the way—ended up just keeping the rest and taking it home to turn it into tacos. And we got cheesecake crème brûlée to take Home, was kind of hesitant at first but how bad could you really messed up a Togo dessert? Chef running the shift or shift runs the chef in this case made me not even bother to speak to the manager about the dinning experience. I’ll stick to Plano.
