Flatbread Company — Restaurant in Maui

Flatbread does a lot of good for the Maui community by hosting non-profit organizations and donating a percentage of sales to them on certain nights; a rarity these days. The menu theme is free-range, natural, organic, and hippie-like.

ATMOSPHERE: Busy, loud, energetic. The pizza oven is up front near some tables and can be uncomfortably hot if you're seated near as this place has no a/c. It's fun to watch the pizzas being cooked but I'd avoid sitting near there. A small bar is off to the side. The back room seating area has a mosquito problem especially at the tables near the windows due to heavy foliage and possibly unseen standing water? Upstairs is a nice cozy option with a few tables and is quieter. Seating is a mix of bar seating, high tops, regular seats, booths, and big picnic-style tables for large parties/groups.

FOOD: No Boundaries Salad Lettuce with shredded papaya and carrots tossed in a pineapple vinaigrette dressing. I'm not a pineapple fan but love the dressing! Got mine loaded with kalamata olives, red bells, mushrooms, sun-dried & regular tomatoes, avocado, rosemary, and Parmesan cheese. Delish!

Pepperoni & Mushroom Pizza My favorite pie. Simply topped with tomato sauce, pepperoni & mushrooms with mozzarella & Parmesan cheese. The greatest tasting combo! Flatbread for all pizzas are thin, crunchy & chewy.

Coevolution Pizza My second fave. Goat cheese, kalamata olives, cheese, sun-dried tomatoes & rosemary. Add tomato sauce for extra flavor.

Homemade Sausage Pizza My third fave pizza. Sausage, mushrooms, onions, and mozzarella. Again, add tomato sauce for extra flavor.

Broccoli & Potato Pizza (special of the night) Broccoli, potatoes, cheddar, mozzarella & parmesean cheeses and herbs. Good but not the greatest as potatoes on a pizza were odd and heavy. Go with a pie that's already on the menu.

PIZZA TIP: Make sure to add tomato sauce to the pizza (some don't come with it so ask your server) which adds a ton of flavor. Even the most odd-sounding topping combos are delish!

DESSERT: Warm Banana Bread Ala mode with vanilla, chocolate or coconut ice cream. Highly recommended.

Brownie & Ice Cream Small square of a homemade brownie with no nuts (unfortunately) and two scoops of ice cream (choice of vanilla, coconut or chocolate.)

Plantain Split Not a fan of plantains but tried it anyway. Didn't care for the taste of it. Why not use a traditional banana? Loved the ice cream!

RESERVATIONS: Only taken for parties of 10+, but they do offer 1-hour call-ahead seating for smaller parties.

SERVICE: Fast & normally very friendly.

My visit to Flatbread Company in Paia was nothing short of exceptional, and it's an experience that has stayed with me even over a year later. From the moment we walked in, we were welcomed by a warm, inviting atmosphere that set the tone for a fantastic meal.

The food was absolutely incredible. We tried several of their flatbreads, each one more delicious than the last. The crusts were perfectly crisp, with just the right amount of chew, and the toppings were fresh, flavorful, and thoughtfully combined. My personal favorite was the Kalua Pork flatbread, which had a delightful blend of smoky pork, sweet pineapple, and tangy barbecue sauce. Every bite was a taste of paradise.

The beer selection was equally impressive. They offered a variety of local and craft beers that paired beautifully with the flatbreads. We particularly enjoyed the Maui Brewing Company selections, which provided a refreshing complement to our meal.

However, what truly made our experience stand out was the phenomenal service. Zac, our server, was amazing. He was attentive, friendly, and had a great sense of humor. He went above and beyond to ensure we had a memorable dining experience. His knowledge of the menu and beer pairings was spot-on, and his genuine enthusiasm made us feel like valued guests.

We enjoyed our time with Zac so much that we returned to Flatbread Company just to hang out with him and enjoy some more beers. It’s rare to find such outstanding service, and Zac's hospitality truly set this visit apart.

We're eagerly looking forward to our trip back to Maui in October, and one of the highlights will definitely be revisiting Flatbread Company. We can't wait to catch up with Zac, enjoy more of their delicious flatbreads, and indulge in their excellent beer selection. Awesome Organic Healthy Food, Great Prices & Service! On our last day in Maui, we took time to drive through the historic town of Pa’ia and surrounding region, and we are so glad we did. We did some shopping in the town center – my wife liked the jewelry at Nectar Creations - then we searched for an afternoon snack. We discovered THE FLATBREAD COMPANY, and sat at the bar to enjoy their wine selections and share their simple Organic Salad (with local lettuces, Maui green papaya, carrots, sprouts, homemade Maui pineapple vinaigrette, topped with a blend of Hawaiian goat cheeses). It was really fresh and delightful! Our very personable and professional bartender Yoanna was gracious and informative about things to see and do in Maui, while offering suggestions about her flatbread pizzas. All the folks around us were extremely friendly and sociable, giving us a very “welcome” atmosphere. Okay, so we ordered the Small Carne flatbread pizza with a salsa base, topped with ground beef, shredded beef, and cheddar, parmesan, and mozzarella cheeses, drizzled before serving with sour cream and lettuce. This was absolutely amazing and delicious!! Wow! Next, my wife surprised me by ordering a “special” coffee, with locally sourced Koloa Spiced Rum, Bailey’s Irish Cream, topped with whipped cream.
