EXCELLENT! Where Subway once was Liberty Taco now is, with an appealing storefront. The sign that advertised breakfast tacos is what really hooked me, so I stepped in. I'm glad I did.
The friendly staff offered to answer any questions, without being overbearing. The space is long and narrow, but very efficient and comfortable. Where Subway's former sandwich-making counter once was is now a kitchen with a service window. Fun wallpapers adorn the room.
I scanned the menu and focused on the Breakfast Tacos and ordered the Texas Brisket, Egg & Cheese. I also ordered a coffee and was impressed that this little taco shop served Kona, a nice way to wait for my food.
I confess that the brisket taco looked small when the server delivered it to my table. But my opinion of it changed as soon as I picked it up.
It had some heft to it, packed full of perfectly scrambled egg and nicely shredded brisket topped with cheddar. It oozed brisket juice every time I lifted it to my mouth. And OMG, it was delicious. If I had had more time I might have eaten three more.
I will definitely return, and I won't wait for another appointment nearby. They are now a destination unto themselves. That brisket breakfast taco impressed me that much, and the menu choices are very intriguing. To quote from their website, "Our made-to-order tacos will take your taste buds on a flavorful journey as you sample our Liberty Steak, Thai Basil, Cali Club, and other varieties."
A local chain, this is Liberty Taco's third location. They're only in Houston. Staff told me that the company has been around since 2017, and this store opened about four months ago. Read more4 Stars, but I have only ever given 5 stars twice. I grade on a curve based on expectations. This is a strip mall breakfast/lunch joint.
Food. Really good tacos. Wife and have tried 6 different tacos and all have been great. Samples are heavy on the breakfast side of the menu, but itching to try many more.
Service. Personal and quick. But as of this writing this location has only been open for a month. So no lines. Staff looks minimal in morning and I worry they will get busy and service will suffer if they can’t ramp up quickly enough. But great as of now.
Environment. Average for strip mall breakfast lunch crowd. Maybe still fleshing out the decor as they are new to the location. But definitely not a spot for lounging the morning away.
Summary 4 stars. I rarely give 5 stars (2 to date). Great tacos, great service (as of now) and standard ambiance. Two breakfast tacos and a drink for $10. Hard to beat. Hands down better than Three Brothers (a few door down) for a breakfast bite, unless you need something sweet. Or maybe coffee (I don’t drink).

Read moreThis is no regular taco joint! This is the 3rd LT restaurant. They recently opened and seem to be doing great! Parking is very convenient. Love that! Service was great. The young man helping me made suggestions and was super informative. Tasty tacos and lots of menu options. I had the Texas Brisket and the Cali Club, both on a flour tortilla. They must be freshly made as you order because both tacos were piping hot! The atmosphere is good with fun murals on the wall. They have bar top type seating available and regular tables with chairs if you prefer a lower style. The fountain drinks are Pepsi products. They also have a small standing cooler with Bubly canned drinks and juices. There are a couple tables outside for dining too. Good news, Liberty Taco serves breakfast tacos all day!
