Mr. Lewis Lehr, CEO of 3M Company once said, the person who never does anything does not make mistakes. An error is human, fixing it is seeking perfection. I made the mistake of anticipating the facts without having asked what the situation was before making my comment. The reality is that after experiencing and trying the delicious Croissants again, I have to confess that if I close my eyes and imagine myself in a small Café Parisien with a cup of hot chocolate, I couldn't be better. The Croissant is crispy and delicious on the inside with that perfect laminated design that gives it that very French style. St. Croix Baking Co. represents all the characteristics of excellent French bakeries in Hudson, WI. A sunny day or not, stop by Hudson, WI, a small historic city with much to see and explore and enjoy the beautiful and well-kept St. Croix River. After reading the information about the bakery I expected something else. I bought Croissants. I was hoping they were really French but I was disappointed. I have even tried other nearby places in the area where they make Croissants and they are better. I have enough culinary and restaurant experience through my travels. St. Croix Baking Company is undeniably one of the most remarkable hidden gems in Hudson, largely owing to these extremely high quality bakery items. It is true, this is much more than just a bakery, this is a superb multi-sensory experience.

I was hosting a very special event, and had need for 3 doz. vegan cupcakes, not an everyday request. To my great delight, not only were the cupcakes visually delightful, they were incredibly good! I heard countless times, from every guest, that the vegan cupcakes were AMAZING, and the small dessert bars were stunning little works of art, so beautiful and so delicious, not overly sweet.

Chef Charles Froke has truly raised the bar for a fine bakery experience, as St. Croix Baking Co. is so much more than a bakeshop. He has the pedigree and experience to produce simply luscious and very special desserts that appeal to all the senses. This little shop in downtown Hudson is a gem of a spectacular find for any type of pastry needs, from Sunday morning almond croissants with coffee, to very special items that leave guests remembering your event! Just tried some of the BEST croissants I've ever had at Hudson's very own St. Croix Baking Company. It was mine and Chad's first time in and we are overwhelmed by the delicious scents of baked goods, sweetness, and fresh bread. We heard from a client that the best place for a good croissant was here and I agree whole heartedly!

We tried the most sought after pastry, the Almond croissant, and was BLOWN AWAY. It had a gooey, sweet, yummy center that I didn't even know was going to be there, with a crunchy, satisfying outside of flakey goodness.

Also amazing was the regular croissant, carmel sticky bun (JUST WOW! THE CINNAMON WAS OUT OF THIS WORLD), and chocolate filled croissant (generous amounts of rich chocolate 🍫).

Finally, we snagged FRESH, warm sour dough loaves, one regular and one with cranberry!
