Somehow walking in solo and requesting no high-top table or bar when i got in, then getting walked in by a bad hair-day pink hostess who then tries to sit me at the bar!?! She was told by the greeter specifically my preference. Im now in the middle of the restaurant and some other waitress speaks to her in spanish in front of me and turns to tell me finally like i wasnt there before, we dont have anywhere else to seat you. (Guy walks by from kitchen) "I see a table here 3 feet away, another 8 feet away and a booth over there 20 feet away?" I look at them. The gentleman heard everything and immediately talks to them in Spanish and points to the 3 tables and indicates more around the corner. He he puts his hand down on my future table and looks at the women and walks away. Im still standing because nobody remembered that im looking for direction ("follow me Sir" or just turn around and leave for my first shitty experience to be my last)? I got a deer in the headlights look from the two woman and finally "pretty in pink" finally does a half hearted gesture to come over. The gentleman shoos them away and I have a seat and proceeds to do serious damage control. He is gracious, kind, and is sincerely upset when i answer his question of how am i?"well for a completely lousy entrance to my first visit? I tell him and he offers a drink on the house. I dont want free anything...i want a pleasant dining staff that is professional and can prepare my meal well. (after meal) tasty. Priced well. Read moreWhen Casa Fiesta closed, my hopes for good Mexican food were crushed. Las Margaritas has become garbage, after finding Fiesta Mariachi, they have been restored.
On arrival, we were promptly seated and chips and salsa landed on the table. The server took our drink order inside of a minute. I decided on the Jalisco Enchilada dinner and my wife ordered her favorite, the El Tapatio. Both of which arrived inside of 10 minutes from our entry to the restaurant.
Three large chicken enchiladas covered in red and cheese sauces, topped with chorizo. With the rice and beans sides, this was a hearty meal. I hated myself for eating so much, but I finished to a clean plate. The red sauce was tangy and cheese sauce blended well with the tang. I always put hot sauce in my rice and then mix it all together with my beans. I did try them each solo and both were a good staple. My only check mark in the negative column would be to shred the chicken a bit finer in the enchiladas. It was pretty chunky and made some of the bites unwieldy.
The El Tapatio (chicken/chorizo blend) was cooked very well. The chicken was juicy and the chorizo didn't look like pan scrapings (shame on Las Marg).

Let’s just say it’s been slim pickins'. Everywhere I turned, it was nothin’ but pineapple pico and chicken ranch tacos bless their hearts, but that ain’t it. Then I rolled up on Fiesta Mariachi, and let me tell y’all… it was like findin’ water in the desert. The food? Lord have mercy. Tasted just like my tia’s cookin’ back home — full of flavor, cooked with love, and not a thing white-washed about it. It was the kind of meal that sticks to your ribs and warms your soul. But the real cherry on top? Sierra, our server. That gal was somethin’ else. It was like she knew what I needed before I even opened my mouth. Quick, kind, and made us feel right at home — like family. You don’t find service like that just anywhere.
