KC's Biscuits and BBQ — Restaurant in Kennewick

We have eaten at this food truck four times now. We have tried about six different menu items between the two of us including The Rancher sandwich and biscuits and brisket gravy. We have also had 2 of the sides. The coleslaw was wonderful. I added a pinch of salt to the cowboy beans and enjoyed them too. Tonight, for my husband’s birthday, he had the brisket platter with a side of beans. He said the brisket was moist and tender with a good smoke ring and flavor. He enjoyed it very much. I had The Rancher sandwich. It was wonderful! The chipotle mayo really added depth to it. It was huge and we had no room for dessert. Overall I give this place a 1 star, but only for 1 particular sandwich. I've only been there once but will probably try again, just something different. The Memphis sandwich gets a 1 star. It's pulled pork, slaw, pickle, and onion on a bun. I have no idea if the pork was any good because the slaw had entirely way too much dressing that it overpowered everything else. The dressing was so heavily applied that the entire sandwich was just a soggy mess. I strongly encourage them to use much, much less dressing in the slaw and not put so much slaw on the sandwich. Let me just start by saying I have been coming here for well over a year almost every weekend. Some weeks I would even come 3 times a week. I absolutely LOVE the brisket biscuit with egg and cheese sandwich. When everything is right it’s amazing. I’ve seen reviews saying the biscuits are nothing to write home about, but when they’re done correctly, they’re the best. Unfortunately, since KC moved to the Hub they have become more inconsistent to the point we have scaled back to once every couple of weeks.
