I stopped by Papa Masala Indian Food Truck today, Wednesday evening around 8 PM, and I’m so glad I finally gave it a try! I’ve heard a few things about this truck and was curious to see what all the buzz was about and it definitely delivered on flavor, friendliness, and that nostalgic Indian street food vibe.
As soon as I walked up, the guy at the window taking orders greeted me with a big smile. He was super polite, helpful, and genuinely nice, exactly the kind of customer service you hope for. Even though the food was made fresh to order, the wait time wasn’t bad at all, about 15 to 20 minutes, which is totally reasonable for a busy food truck during dinner time.
For my order, I went with their Noodle Burger and their Special Mango Shake.
✅ Mango Shake – This was the highlight of the meal! It was creamy, rich, and had that perfect mango flavor with chia seeds you’d expect from a quality Indian-style shake. Not too sweet, not too thick, just refreshing and delicious, especially for a warm summer evening.
✅ Noodle Burger – This was a really fun and unique idea. It had that street food charm—crispy noodles inside a soft bun, paired with flavorful chutneys and spices. However, I did find that the noodles themselves were a little bland and could’ve used a bit more seasoning or sauce to give it a stronger punch. Also, the bun was quite oily, which made it a little heavy to eat. But overall, the flavors were still really enjoyable and definitely reminded me of Indian snack stalls.
One thing I really appreciated is that despite being just a food truck, the quality and flavor of the food was better than a lot of well-known Indian restaurants I’ve tried in the area. It really captures the heart of Indian street-style appetizers—flavorful, casual, and comforting.
There are so many other items on the menu that caught my eye, and I’m definitely planning to come back to try more. Even though the Noodle Burger could use a few tweaks, the overall experience was very satisfying.

The bun is airy and the veggies give it a refreshing crunch. I got two. We had both kathi rolls, and the veggie fries with a mango ice cream shake the first time we visited. The kathi rolls have a nice kick with the perfect amount of spices in the marinate. The paneer fries are thick and carries great flavor as well. Shake is not too sweet or overly heavy.
