I found the Wilson on Instagram and booked the Dinner and a Band tickets for my husband and I for his birthday and the experience was less than ideal. We moved seats twice because band was playing across the pool rather than the turf area where the bar and seats were from what it seemed to show online. I could not even admire their talent. The food was "okay", but to have traveled for as far as we did, it was not something that I will be returning for. When we initially walked into the restaurant that host could not even find my reservation to show that I booked a table and had already paid for our evening. Following that, the manager came to our table and said that she was "making sure that I already paid" the unwanted attention was quite embarrassing as other guests were around and the approach was terrible. If management knew that they were running a promotion for this "event" they should have been aware of such reservations, and the hostess and servers made it pretty apparent that they did not know what was going on. We even paid for an appetizer of guacamole and chips separate from our meal which was just slapped in a bowl, it was almost brown, and the chips were in a separate bowl, the presentation would have been better at a chain restaurant like Applebees. Aside from the food and service, the scene was just not it, I planned a night and spent over $200 for an experience in a new place that was terrible, it was a table next to a hotel pool. When our bill came the manager still had the charges for the meal and two drinks that I had already paid for with the reservation still included. I would have thought that for all of the things that we had already gone through with the manager, server, and host questioning and making sure that we had a "paid for reservation" that this would not be on my itemized receipt for me to pay for again. I had to wait for the server to come back again and bring it to their attention and address the manager again to remove it. I could not imagine a more uncomfortable dinner. From the beginning, the process was disorganized—despite having a reservation, nothing was set up upon arrival. The service itself was poor, though I want to be clear that this wasn’t entirely the server’s fault. There seemed to be a general lack of coordination and urgency from management.
We encountered multiple issues throughout the visit. The biggest inconvenience was the check-out process: it took over an hour and a half to pay because they didn’t split our checks as requested. We had to manually calculate and subtract individual orders from a large group tab, which was both frustrating and time-consuming. Our server, who was also the bartender, had to go back and forth multiple times, which delayed everything—including drink service.
There was no brunch service, even though it had been advertised, and the reggae band that was promoted never showed up. All of this would have been disappointing on its own, but what really stood out was the complete lack of concern from management. While we were visibly frustrated, a manager was seen casually eating French fries inside. The server even told one of our party members (who overheard while using the restroom) that management had remarked, “man, they are so pissed out there,” acknowledging the issue but doing nothing about it.
This was meant to be a birthday celebration, and I could have easily taken our party of 18 somewhere else and received better service. Every person in our group works in hospitality, and the consensus was unanimous: the experience was unacceptable. Days later, the group is still talking about how poorly it went.

We ate at The Wilson twice during our stay. The first night we arrived on Valentine's Day and went downstairs from our room at the Melia to try the prix fixe menu at $60/person. We arrived very close to kitchen close but they were willing to seat us anyway.
I ordered tuna tare-tare, surf and turf, and chocolate cake. My girlfriend had the garden salad, squash ravioli, and bread pudding.
Everything on my end was very good with two exceptions: steak was cooked medium instead of medium rare & they were out of the chocolate cake dessert, so they swapped it with apple pie crumble with gelato. It was still great, but there was only apples and ice cream, no crumble.....
My girlfriend's entrée was very small, consisting of only 5 medium ravioli with a small amount of sauce. It was clear I got the better end of the deal with my shrimp and steak... Just be mindful of that- her meal was definitely upcharged (would have been better to order the items separately).
We ordered room service the next morning as we were getting ready for our day in the Magic Kingdom. We ordered 2 coffees, fruit, avocado toast, and side of sausages for breakfast at 7:05AM. We called the front desk of the Melia at 8:10AM to see where our order was as it had already been over an hour and our shuttle was leaving in 20 minutes. They said they'd have to check with the kitchen.
10 minutes later, it arrives and we were pretty bummed out. Half a container of fruit for $10, two small sausages for $8, and bitter coffee for $5/cup. Avocado toast was good value.
We chalked up the wait to a busy kitchen, but when we went downstairs to get the shuttle, the restaurant was almost entirely empty !
