The esthetic is all around comforting, wooden tables coupled with sofas and small armchairs to the side of the entry area and a nicely sized bar. Photos and posters adorn the walls, I spot Jerry Garcia once or twice. There must be a jam head amongst the mix of the crew. The main thing about coming to Rosalee's one should know it's that it is not large, but it's also undoubtedly the best pizza place in Longmont. This means, almost assuredly, you will be met with either a wait or you may end up sitting somewhere you typically might not. We ended up sitting at the bar on this outing. Previous times, I've sat outside, which I tend to avoid like a vampire because I'm extremely hot-blooded, or once I sat at a 4-top with some friends. Overall, though, the vibe of the place is positive, so mingling with some unknowns tends to be a positive experience. The staff seems to keep a very positive tone and is as attentive as they can be. The knots (either sausage or garlic) are fantastic, just be aware, they come with a boatload of a strong garlic infused butter. The pizza is exactly what you want, a nice crunchy base (smashes the knife scrape test), a little char, and a good use of quality ingredients. For those that imbibe, there's plenty choices to choose from here without it being a daunting task. For those in Longmont looking for a za, there's other, bigger options, but Rosalee's is really the place you want to go. Wait a bit or make some new friends at the bar (even if it's only the very friendly bartender), it's worth all that!

We ordered their house sausage 18" round and garlic knots. The knots came out first and looked great. The dough must not have much salt in it so I was expecting this blast of amazing flavor.. Not I asked for some marinara sauce and that helped some. The sauce was cold and raw and not much flavor. Maybe not bad but not my thing. We waited about an hour from the time we can in until we were served the pizza this includes the wait time for the table. The pizza crust is very crunchy almost paper thin. The dough is kind of tough like a Ciabatta bread dough. The pizza had very little to no cheese on it and the sauce was not what I expected. It must be the same as the cold sauce I was served for the knots. but cooked on the dough. Again the dough has very little salt. Think abo's pizza with crunchier crust and no cheese and bland sauce. There house made sausage is ok, it's strong on the fennel not fatty. We will not be going back.. I really enjoy good pizza, no not any of the chain pizza places but here is no better. You may like it but it's not for me. Even my wife said she didn't like any of it.

This was our first time after hearing exaggerated reviews on the place and we were extremely disappointed, not just by the food but mostly by the service and particularly the selfishness of the owner.

We were told upfront that the pizza will take 40min to arrive so the waitress recommended if we were hungry to order a salad or more carbs. That was nice though…. It took 30min for a poorly made, antipasti salad to arrive, and before you think to yourself well they made it from scratch, yeah…. No! It’s a very poorly made salad (sounds good but…) After we got the pizza we were eager to try it because of all the exaggerated reviews (plus we were super hungry), after 2 bites it became very clear that we were eating dough with tomato sauce and a light sprinkle of cheese on top. There’s nothing wrong with that if that’s what you want but it was definitely not what we wanted, so when the waitress came to our table to ask how things were a voice in my head said I shouldn’t lie, so very politely I answer that taking into consideration the time we needed to wait and the exaggerated reviews about the place, it’s extremely disappointing. All we wanted was not to lie since she asked but she immediately brought her “manager” (which then turned out is the restaurant owner and the “chef”) and she went into telling us how wrong we are. You would expect when you are the client and the “manager” is coming to talk to you since they heard you’re not satisfied to be actually listened to, we ended up needing to listen to her explanation why she wasn’t able to accept that there are people who don’t like her pizza the way it is, she was offended and went into an explanation of why we should not complain and that we’re suppose to like it because to her that was the perfect pizza. So then she thought to buy us off after all that with chocolate pudding, saying:” well, you guys want chocolate pudding? I’ll treat you with chocolate pudding”…… do you think we got chocolate pudding? Nope. That’s not a person of her word. We didn’t care for chocolate pudding and we didn’t care about the conversation with her either, all we did was being honest about our opinion of the pizza since we were asked. Miss Amy, we don’t care that your dough is a 3 day dough, we don’t care that you thought that the pizza you made is perfect for you. It wasn’t for us and we ate leaving half of it where it was obvious that there was no cheese on it. We do understand that you find a lot of pride in your pizza which is great but you suck in empathy and understanding of costumers, and your word means nothing, that’s the kind of a person I won’t do business with.

Miss Amy of course doesn’t need us as costumers, she got enough mediocre people who will pay for bad service and cheaply made food. We have higher standards.

In conclusion, go there where you are NOT hungry. Doing a take out will solve the time problem these guys ALWAYS have. Second, If you’re like us and you don’t want to be basically eating dough with tomato sauce and a sprinkle of cheese make sure to add extra cheese or even double it (yes, that’s how much there’s no cheese on the pizza). And…… never get to talk to the owner if you are actually not a fan of the pizza, since she’ll just explain to you why she’s right and you are wrong. I guess that’s what they do in...

I came here for the first time today, and it definitely passed my expectations!! The environment was open, welcoming, and kid-friendly. They also have a bar and arcade machines that seem to be popular with adults! For food, I had the daily special slice (bacon and cherry pepper) as well as the bacon jalapeño breakfast square. As a spice lover, I enjoyed that I was able to get a slight kick without it overpowering the other flavors! The crust was crunchy and has a slight smoky char which complimented the bacon very nicely, and I imagine it would be just as good with any other meat. The breakfast square was also a nice surprise since it uses egg instead of marinara sauce, and it definitely has a more subtle flavor which can be a nice quality first thing in the morning. For drinks, I had a pint of the Left Hand Sawtooth Amber Ale which has a hoppy taste & goes down smoothly. I also sampled the City Star Bandit Brown which had a soothing maple/honey-esque undertone, and I also sampled the Genesee Cream Ale which was a lighter beer with slightly earthy/hoppy notes & also went down very smoothly. The servers are very friendly, insightful, and have great recommendations for beer-pizza combinations! I recently had an unpleasant experience at Rosalee's Pizzeria, and I feel compelled to share my disappointment. While the food itself was decent, the lackluster service and rude behavior of one of the employees left a sour taste in my mouth.

I placed a to-go order for two pizzas and garlic knots around 5:30 PM, and I was informed that my order would be ready around 6:30 PM. The estimated wait time was not a problem for me, as I had other errands to run. I returned to the restaurant at 6:27 PM, assuming it was an appropriate time to pick up my order.

After paying for my food, I patiently waited for my order to be prepared. However, to my surprise, it was already 6:50 PM, and my order was not yet complete. At this point, an employee, possibly a manager, approached me and made a rather rude comment. They stated that I should never arrive before my pickup window, insinuating that I had arrived too early.

I explained that I had been told to come back at 6:30 PM, and I had not been informed about any specific pickup window. To my dismay, the employee then informed me that the pickup window for my order was from 6:30 PM to 6:45 PM, and I should not have arrived outside of that time frame.

I found this response to be extremely impolite and unprofessional. Not only had I arrived at the time I was given, but I was also already over 5 minutes past the end of my 15-minute pickup window, and my food was still not ready.

As a customer, I believe it is essential to receive clear and accurate information when placing an order. It is the responsibility of the restaurant staff to communicate any pickup window restrictions at the time of order placement. Unfortunately, Rosalee's Pizzeria failed to do so.

Although the quality of the food was satisfactory, I cannot overlook the poor service I experienced. The lack of transparency regarding pickup windows and the discourteous behavior of the employee left me with a negative impression of Rosalee's Pizzeria. I hope the management takes this feedback seriously and implements measures to improve their communication with customers.

Overall, I would hesitate to recommend Rosalee's Pizzeria due to the unsatisfactory service I encountered. There are other establishments in the area that offer similar food with better customer care, and I would encourage potential customers to explore those...
