Tacos GTO (Food Truck) — Restaurant in Longmont

Fast, friendly service and the food is simply sensational. Absolutely delicious; all the meat is cooked to perfection, seasoned well, the the vegetables are fresh. I got the tacos and quesadillas and they couldn't have been better. I will absolutely be back!

Edit October 12, 2023. Went back again and this place is easily five stars. Amazing food. Great, friendly service and my tacos and quesadilla were ready super fast. Just go here, you won't regret it. Legitimately some of the best tacos I've ever eaten.

Edit October 24, 2023: Back again tonight. I don't know how you can get any better than this place. Tacos GTO is so good that it makes me realize that other places I've given five stars might not actually be as good as I thought they were. The salsa verde is the perfect blend of spicy and flavorful. The meat is cooked perfectly, the tortillas are somehow crisp but soft. Just go here. Whatever you order is going to be amazing. Me? I stick with the quesadillas and tacos, but anything you get will be amazing. I cannot recommend this place enough. I'm not even done with my quesadilla yet and I'm already looking forward to the next time I stop here. Honestly, this may be my favorite restaurant in Longmont. Consistently unbelievably delicious food. I've lived in Texas and southern California, and I've traveled to Mexico and central America, and this place easily beats any Mexican place I've been to. Just go here. Order everything. You won't be disappointed.

Edit: January 31, 2024: Yep. Back again. Literally eating quesadillas as I type this. Dude taking orders tonight who I hadn't seen before, but still SUPER friendly and let me practice my Spanish a bit. Incredible people, incredible food. I'm not even done eating my food yet and I'm already looking forward to the next time I go here.

Edit: February 2, 2024. Yeah, me again. "But weren't you just there two days ago?" Yeah, I was, shut up. Also, technically I ate their food yesterday too since I ordered a lot two days ago and had leftovers. You know the drill at this point; fast, friendly service and the best tasting Mexican food I've ever had. The dude who takes the orders is legitimately helping me learn Spanish and making more feel more confident using it. Oh, also, the salsas are unreal. I'm a gringo but they're the perfect level of spiciness; TONS of flavor and hot enough to keep you from getting too cocky. Go here, order whatever, be happy, you're welcome.

Edit: March 16, 2024. High af, drunk af. Stopped by here tonight on my way home and yeah, it's amazing as always. Friendly service, unbelievably tasty food, and great prices. The employees here let me speak Spanish with them so I can practice and are so patient and friendly with me. And the food...good lord, the food. I don't know how you get more flavor than this. The salsas are hot and incredibly flavorful; the red one is spicy and smoky and delicious. Yeah just stop here and order whatever and thank me later.

Edit: August 2, 2025. I moved out of Longmont last year so unfortunately I don't get to go to Tacos GTO as much as I used to. Haven't found great tacos in Broomfield yet (open to suggestions if you have any) and so I decided to drive up to Longmont specifically to stop by this food truck. My only regret? Not doing it sooner! Horchata was great and I got lengua, al pastor, asada, and chorizo and honestly, I should've ordered four more. Great little family owned spot that makes unreal food. I can't fathom why there wasn't more of a lunch crowd when we stopped in. This place is awesome! I had a chorizo torta and my husband ate flautas; both were absolutely delicious. Tacos GTO nails the flavors and freshness, plus so many other small details: the cheese melted onto the bread of my torta, the thin crispy tortilla chips and spicy salsa... I have no complaints about portion size, either. I also appreciate the slimmed-down menu. Sometimes restaurant menus are so long you can get lost in 'em, and you start to wonder whether every single recipe has truly been polished to perfection. I suspect that offering slightly fewer options, but with customization options in the form of different meats, lets Tacos GTO focus on their strengths. Our food came out super fast, and the service was attentive. We'll definitely be back next time...

I had tacos al pastor and a carne asada quesadilla. I requested no cilantro and got no cilantro! The meat and onions were well seasoned and well cooked. The raw onions were fresh, crisp, and sweet. The tacos came on corn tortillas. The quesadilla was made with flour tortillas. The quesadilla has the nice grilled taste of a good burger! The red sauce is flavorful, deeply smoky, and has a respectable spice level. The green sauce has cilantro in it, so I can't give a good description on that one.

The value for the price is great! The food is tasty and satisfying! Overall, I highly recommend giving this place a try!
