Ran into the Antipasti team at Newhall Farmer's Market last Sunday! I had never had homemade pasta prior to this and so I thought I'd give it a shot. I ended up buying the linguine, pappardelle, and two cheeses (artigiano & burrata). The person working the stand, recommended I keep my sauce recipe simple and to use only tomatoes, garlic, olive oil and basil.
So fast forward an hour later, I get back home and make myself a meal that took about 20 min or so to cook and what I'm about to say is not an exaggeration...
The linguine was life changing... almost like I traveled to Italy without ever leaving my kitchen! SO FREAKING DELICIOUS!!! I immediately made myself another bowl but this time with the Papparadelle (I know I'm fat lol) and added some burrata to it! I don't think I can ever go back to the regular old dried stuff...

No Italian would ever sub canola oil for olive oil. The water added to the sauce was terrible and changed the texture significantly. Sad there were no pine nuts but that was less of an issue. I had reached out to them via their contact form on their website and they never responded.

One thing though -- the pasta consistently sticks together, more than can be separated with a single stir during cooking :/ we always hand separate the strands before cooking, probably hard to avoid with food-safe transportation of this pasta, cooks great after being separated though!...
