I recently visited Bincho Ramen Tarzana and was absolutely blown away by the quality and depth of flavor in their Clear Tonkotsu Ramen. As someone who’s had a lot of ramen around LA, this spot instantly stood out.
The clear tonkotsu broth was unlike anything I’ve had before — light and refined yet packed with deep umami flavor. You get all the richness of a traditional tonkotsu, but without the heaviness. The chashu pork was incredibly tender and flavorful, and the ajitama egg was cooked perfectly — creamy yolk and seasoned just right.
We also had the gyoza, which came beautifully crisped on the bottom and juicy inside. Paired with their dipping sauce, it was a great way to start the meal.
The vibe of the place is relaxed and modern, and the staff were welcoming and attentive. You can tell they really care about the food and the experience.
If you’re looking for high-quality ramen that balances richness and clarity, Bincho Ramen is a must. Their Clear Tonkotsu is a masterclass in ramen craftsmanship — I’m already planning my next visit.

I got the Bincho Spicy Tonkotsu (mild spice level), and my partner got a different Tonkotsu, as well as an order of the garlic edamame. The garlic edamame was delicious, though maybe a little -too- heavy on the garlic butter. The ramen was delicious, and my partner commented on the pork being fantastic. Nice and thick slices cooked perfectly. The eggs were also the right amount of cooked with a gooey yolk. The broth was amazing, creamy and good. The service was pretty good, we never had to wait for anything. We did go at about 2pm, tho, so not exactly a busy time. I love the variety of teas they have, as well. I got an iced Oolong tea and my partner got the Thai tea, both very satisfying. Atmosphere was nice, with some decent music playing, and a sports game broadcast on a projector behind the bar area. A great hole in the wall type place, as I've been by a few times and never though to go in until I searched for a ramen joint and stumbled upon this one online. Read moreI love discovering new restaurants, especially in the valley, and Bincho Ramen Tarzana is quite the gem.
The tonkotsu ramen is rich and creamy, and the broth flavor is more concentrated than what I tend to find in other ramen. And yet, it's not overly salty or overpowering. It's a great balance of flavor and works well from the noodles to the chiarsu. It is harmonious!
The spicy tonkotsu (I added the chili oil on the side) adds a very nice kick and excitement to an already good ramen, as well. If you're a spicy tonkotsu ramen lover, you can't go wrong here.
As for the appetizer, the gyōza is a must have. They are hand-made and deliciously surprising with the inclusion of the soup inside that reminds soup dumpling. I only wish there are more than 5 to share, but each gyōza is generously sized.
And speaking of which, the karaage is also generously sized. I usually prefer a smaller, more bite sized karaage, but it's hard to complain the food continues to taste this good.
