If you have perhaps tried a Canelé you are in for a “bon surprise" with Gaël’s creation! Everything about them puts these at the top of my list of French pastry. His recipe nails the crisp on the outside and soft on the inside. He says it requires a very hot oven. From the moment I placed my order, to the moment the beautiful pastries were delivered, I was truly blown away by the professionalism and courtesy with which I was treated.
