My new co-worker took me to a welcome lunch on my first day and asked what I was in the mood for .. she suggested a couple of places from pizza to mexican to sandwich to .. well a lot they have a ton of food spots on Colorado.
I went with mexican and she said let's try Taco Spot. First off easy parking (am always about NOT getting parking tickets) and the other customers were super busy eating but looked happy and smiled at me as I walked in (hey good Mexican food makes everyone happy).
Taco Spot is good food like home cooked made by someone's grandma good food! DAMN the salsa bar was the first thing I saw and it had everything from crazy hot to mild to the spicy pickled veggies (my gosh so hot that it brought tears to my eyes .. GOOD tears!). My friend got a burrito and she tempted me to get enchiladas (3 per order). The front corner staff person when I asked could I have two cheese and one beef 'smiled' AND no sauce (he suggested I get it on the side since it's so good!) and said you got it! I LOVE friendly staff people who let me make random changes with a smile.
I really liked my enchilada and the salsa was the right amount of hot to really remind me that good spicy makes your toes tingle! The beef was tender, well seasoned and the cheese enchiladas were gooey cheesy (yummy). I liked my beans and rice and the chips had to be dipped in the hot salsa (once again they have some great hot salsa).

Read moreWell made Mexican in Eagle Rock. It was easy to find parking on the side streets. They have 5 or 6 picnic tables in the front so you can eat COVID safe. I ordered a side salad substitute instead of beans and was surprised it was... actually a good salad. Usually Mexican places just give you some chopped lettuce bits for "salad" on a plate (blegh) but this place gives you arugula and tomato and cucumber and (cotija?) cheese....like an actual salad. The relleno sauce is good and they put a nice blend of cheese on top. They actually give you enough sauce to mix with rice too, unlike some place that basically put a little on the top of the chile pepper and leave you hanging.. dependant on extra salsa to keep from choking on dry rice.
But the rice here wasn't dry anyway. And it was some nice green rice, not that tomato bits and peas mixed together stuff you get elsewhere.
My wife ordered the sopes and they were very good. They have a great salsa bar and aren't stingy with it. No extra charge for any salsa, just take what you need and enjoy unlike some places (cough cough King Taco). Honestly the salsa bar can make or break a meal sometimes so this...
Read moreMy friend introduced me Taco Spot for vegan tacos a while ago. We finally got a chance to give it a try on a Friday night. Not that many people here dining on a Friday night, assuming many people were out for more of a special dinner. This is a family/kids friendly place. Most customers are families. Staffs are super nice with great services. There are many vegetarian options and they can be made vegan (leave the cheese out). Unfortunately they do not have non-diary cheese. As other regular Mexican restaurants, there are many delicious salsas for additional taste. Prices are fair considering the portion of food you get. Each dish prices from around $7 to $10. I got veggie taco without cheese. It's 3 tacos with rice and beans. Not a bad deal. The taco is good especially the sautéed spinach adds more interesting texture on it. We also ordered Tofu burrito bowl. Marinated tofu was pretty good. Overall we like the food here. You do need to add salsa into dishes to make it more flavorful, but I think it's still good. Parking in the rear. And the restroom is unisex....
