Anyway, this staff twice (all Ive been to) have been great to us.
The cooks allowed my request to not add cilantro for me and they were kind about it! They never grumbled or complained.
My olfactory receptors make life a mess for me. These receptors are responsible for detecting certain aldehydes which are flavor compounds found in cilantro. Individuals with this genetic variation are more sensitive to these aldehydes, leading them to perceive the cilantro flavor as soapy or metallic
The things that would make this place perfect for me:
Thick cheese sauce. It's entirely too thin.
The onions are too thick cut for me. I have issues with high fodmaps so thick hard onions can mimic food poisoning on people who do not learn that onions, garlic, cashews etc etc are "high fodmaps" which causes massive bloating, abdominal pain, nausea, diarrhea, and in severe cases, throwing up. So, I'd venture to say the vast majority of people who get sick at a restaurant has an intolerance to "high fodmaps."
How is this their problem though? Its not its my sensitivity.
I did forget to ask for no onions today...so when I get my food I will just push those to the side.
Could they prep onions and make them finely minced? Sure, if they do man Id be so happy.
I do wish there were finely chopped up green onion options (discarding the white root ends only green) no whites of the green onions because just the green part is a "low fodmap" option.
I wish the tomatoes were ripe and not pale red. So, I just do not eat it. It is a waste but oh well.
The cabbage could be shredded with a grater for a finer grate but again.... some people do not mind.
I have been cooking so long and I have prepped for some serious gatherings and my mom and aunt cooked for multimillionaire's when I was growing up so I do know what I am talking about.
Also, I am not from Wisconsin. Yes been here over a decade but not from here. All my culinary skills are either from my family or a learned ability because as my mom used to say and many others say "Chef" to me because of my dishes and bougie.
Well, I miss my two Mexican restaurants from Tennessee but theres not a place here in Wisconsin that will ever compare to them.
What do I appreciate about this place? Their meats are not over cooked. That wins for me. I like the shrimp and chicken so far.
Unfortunately you will be very disappointed with the breakfast burrito as the egg was seriously overcooked and barely there. The presence of the fries seems like an afterthought.

I mean... some people like chunky onions, not me.
We go out to eat to not cook.
Sure if theyd like to finely mince onions up... they have become 100% better. Yes, if they got green onions in (without dicing the white parts with them) even better. Ripe tomatoes? Booooiii if they did all that... They'd be on fffiiirrreee. Plus not overcooking eggs. Overcooked eggs are just not pleasant. Adding more cheese not to drown things out but to bring out the experience would be good.
There is something calming about the butterflies. I love it there.
Also, this place has been crowded. If you go at a busy time expect mistakes. I keep forgetting how everyone is perfect in this town... insert sarcasm.
So, Taquera Monarca, it may seem like my review is negative but its just little things to make it 100% better for some people. However, you are in Marshfield. I hope they will be kind to you all. I have seen a lot of mean spirited people in this town in 10 years BUT I have seen some of the most beautiful kind people too. I pray you find all the beautiful kind people.

They also have a sauce station with different salsas, avocado crema and limes.
Everything was clean and staff was nice enough.
I had sopes and they were very good. The sauces are all spicy so if you like mild or no spice, beware! I don’t mind spicy.
Only complaint is my husband’s steak was dry, but we came late so it may have been a timing issue. He said it wasn’t tough. Mine was excellent and I was very happy. My only complaint was cutting with the plastic knife. I had to use force to get through the corn base as it had a crispy bottom. That force repeatedly tore the paper so I was a little concerned I might eat the paper, but I think it was ok.

Cashier/host very friendly described the burrito bowl and it sounded delicious! We also ordered chicken street tacos, a chicken taco salad and street corn. I had the carnita burrito bowl, it was large and had a great variety of rice, cheese, meat, corn and other items but the flavor was somewhat bland for me. The street corn was amazing. They also have a cart with a variety of flavors to add to your dish. I will definitely return to try...
