The best food (period!) I've eaten in Seattle in SO long, let alone out of all the Mexican food I've had out here (and there are plenty of good ones). Not to mention, the owners BRING the atmosphere-- no interior dining space even needed. Geniunely warm-hearted, good people-- hard to feel that out there in the world these days! I've tried the Al Pastor and Camaron tacos and they were both #1 of their kind that I've had out here. Every bite was so consistently delicious. The shrimp was so juicy as well as properly seasoned and prepared. A chunky pineapple spear on the al pastor, are you kidding me! What a delight. The owner meant it when he said all the food is prepped and cooked daily, no leftovers sitting overnight/out all day. You can literally taste that difference. The Jamaica drink is a must to cool down the spiciness-- extra refreshing now that warmer & sunnier days have arrived. I am so excited & so lucky that this food truck is on my route everyday!
UPDATE: I’ve now tried every taco except chicken and it is amazing how hard it is to pick a favorite! Usually there is only one or two good tacos on a menu, the whole lineup is stacked here! I never go for lengua because it’s usually dry or bland but this lengua was just as good as any steak taco— beyond impressive! Read moreI tried Las Bugambilias yesterday for the first time and wow — I’m genuinely blown away. I had the two vegetarian tacos: the Toreado with cheese and the Panela cheese taco, and I can confidently say these are the best tacos I have ever had in my entire life.
I’ve lived in California — taco central — and nothing I’ve tried there even comes close to how good these were. The flavors were rich, perfectly balanced, and absolutely mouthwatering. I was nearly in tears because of how delicious they were (yes, they’re that good).
And the sauces?! Incredible. I tried the avocado green salsa, the chipotle mayo, and one more (can’t remember the name, but it was divine). Each one added such an amazing burst of flavor, I couldn’t stop raving about it — literally messaged all my close friends and told them they must try this place. I never do that for restaurants, but this was a must-share moment.
To top it off, the owner was incredibly warm, kind, and welcoming. You can feel the love and pride they put into the food.
I’m so grateful they have so many vegetarian options — I’ll be coming back every week during my lunch breaks because this place is just that worth it.

Read moreFound in the parking lot of the Chevron Gas Station - I had high hopes after seeing all the reviews on here. Typically, my experience is places are way too hyped up but not in this case. The Lengua Burrito I had was huge and paired with the avocado and spicy salsa it was really delicious and filling. A little on the greasy side but I prefer a delicious and flavorful burrito over a sad dry one. So 5/5 for the Lengua Burrito.
I also wanted to try out the Al Pastor Taco - and it was huge in terms of a taco in my opinion. Another delicious menu item. I will definitely have to go back and try all the other offerings. I'm glad I gave this place as try as it is now one of my favorite Mexican restaurants/food trucks out there.
Highly recommended.
edit: also noted some of the snarky only low reviews stating only Mercer Island folk will appreciate this due to lack of flavor. The tacos were delicious and if the burritos aren't spiced enough - that's what Salsa is for, which you can add as you eat.
